we love eating pancakes or waffles on the weekends for brunch. one of our favorite pancakes are these blueberry pancakes. i find that adding a variety of flours to my pancake batter gives a unique flavor and each flour offers different nutrients. you may add one type of flour or mix them up as you please. i also left out the egg and used flaxegg instead, but please feel free to add an egg if desired 😊. i love adding lemon zest to my blueberry pancakes because i think blueberries and lemons pair so nicely together ♥️ .
blueberry pancakes 🥞1/2 cup whole wheat flour 🥞1/2 cup almond flour 🥞1/2 cup chickpea flour *or may use 1 1/2 cups of desired flour 🥞1 teaspoon baking powder 🥞4 dates-pits removed (soaked in 1/2 cup hot water then pureed) 🥞1 flax-egg (combine 1 tablespoon flaxseed meal to 3 tablespoons filtered water. let sit for 5 minutes and mix with fork) or 1 large egg 🥞1 cup of unsweetened almond milk 🥞1 teaspoon lemon zest 🥞3/4 cup blueberries 🥞oil of choice to cook the pancakes. i used avocado oil .
add the flour(s) and the baking powder to a bowl and mix with a fork. add the soaked and pureed dates along with the flaxegg. mix. add the milk and mix. add the lemon zest and the blueberries. fold it into the batter in a gentle manner so the blueberries don't get mushy.
add some oil to the hot pan over low heat. scoop 1/4 cup of batter onto the pan and cook 1-2 minutes on each side or until they are golden brown. .
for my toddler: served with fresh fruit.
for me and my husband: served with some maple syrup and fresh fruit. .
