Good morning happy monday. i've always been a fan of monday's. fresh start, new goals, clean slate. sure, i'm busy and running from thing to thing today but who isn't?? busy does not equal bad. just gotta do what you can to enjoy it 😌 with that being said, busy does equal no time for food pics... so here is yesterday's breakfast - chocolate chia pudding 🍫 one of the questions i get most from people is, "what can i have for a healthy breakfast that isn't eggs??" welllll i found something!! when i first heard of chia pudding i was like ya no thanks - chia seeds won't cut it bc i need to eat in the mornings. but i'm so glad i gave em a shot! basically tastes like dessert and is super filling(as long as i add more fats and protein to them), and takes no time since you prep them the night before. i'll put the recipe below! hope you all have the best day πŸ€— . . combine all the following in a jar with a tight sealing lid and store overnight in the fridge: 1/4 cup chia seeds, 1 scoop of @furtherfood collagen (or 1-2 tbs protein powder of choice), 1 tbs cacao powder, 1/3 of a ripe banana, smashed (you can use anything to sweeten it - a bit of honey or maple syrup would work), 1/3 cup of full f*t canned coconut milk (can omit and just replace w other liquid, just makes it creamier), and about 1 cup (ish.. idk i didn't measure. but put more than you think you'll need bc the chia seeds soak up a lot) of nut milk. top with whatevaaaaa in the morning

Coconut blueberry chia muffins! #glutenfree & #dairyfree. sunday’s are the perfect day for baking & i’ve been craving blueberry muffins for awhile so i whipped these up this afternoon. the recipe is super simple & delicious! preheat your oven to 350. in a bowl mix 1/2 c of coconut flour, 1/2 tsp sea salt, 2 tsp of baking powder. in a separate bowl mix 1/4 c of honey, 1/2 c coconut milk, 3 eggs, 2 tbsp of coconut oil, 2 tsp of almond extract (i ran out of vanilla!) slowly mix wet ingredients into your dry ingredients. once it’s mixed at tbsps of chia seeds and half a cup of fresh blueberries. bake for 25 mins until golden.

Everything is a question off perspective. today i had an accident where i ended up banging up both my wrist pretty badly. i can’t lift anything, have a hard time opening a door or even opening a bottle to get myself something to drink. i was angry for not paying enough attention and letting the accident happen. i was frustrated for needing help to do the simplest things. i was sad for not being able to do any of the things i planned for today. although i know very well that this is just a reminder to slow down and surrender, my emotions got the best of me and my family was at the other end of it. have i learned my lesson? not sure but it will take a few days to heal my wounds, a lot of time to keep working on it. and i am very blessed to have such an amazing, understanding and supportive family. be safe and have an amazing day everybody.
