Paprika and cayenne roasted, smoky chickpeas and greens in tomato sauce/ black and white quinoa/ marinated jackfruit fried in gluten free batter
zesty lime and garlic tahini sauce
comfort food .
put this on the menu as a lunch special at work.
i have had a box full of beetroot
with the beetroot tops/ greens.
they are super delicious and versitale.
they can be just chopped up and sauteed with garlic, or
whichever other creative way.
i sauteed mine and added to roasted chickpeas,
because chickpeas and any greens + spice = success in my books.
i am passionate about using up all of the fruit and vegetables both professionally and at home .

my a is away for the weekend and he would be amazed at finding out i have already tidied away my bags from the workshop and our kitchen is in order..
i’m infamous for leaving bags unopened for days when returning home exhausted from a workshop or event. but this time was different. i’m learning slowly to simplify what i do, not to spend all my energy just keeping it together. and i’m learning the power of treat / rest time and restricting my work window.
if that sounds cryptic, earlier tonight i set my old-fashioned egg timer to 10 minutes telling myself “i’ll tidy up for 10 minutes then i can have some cake and watch a movie” - then, once i was in the swing, i extended another 10 minutes and another 10, till the work was done. and now i’m posting here before treat and film time 😊
this may seem like child’s play to you but to me it’s a big step. my usual pattern has been to exhaust myself (by taking too much on...by believing i must do loads-better-more...that less is not enough) and as a result i get too exhausted to finish the job - to close the circle. this is something that became really clear when i did my launch event last month and i want to change it. it takes determination, but i know i can do it :)
anyway, enough rambling .. ❤️☺️

Today i spent such a lovely afternoon with the rebecca gang 🤗 @veritevegan and i trekked over to @thezestylime ’s beautiful new home - and while it was quite a journey, the company and the food made it more than worth it.
our amazing lunch spread - prepared by the tofu queen herself @thezestylime - included sweet and sour tofu with pineapple, miso and tahini kale salad, steamed veggies, and a hearty helping of rice 🍚 trust me, you need this tofu (and #zestybowls) in your life! it was fried to perfection and so delicious 😍
what’s your fav chinese takeaway? sweet and sour chicken was one of my go-tos before going vegan, and this bowl was honestly even better than those takeaway meals i used to get! 🥢
