Mise en place
a culinary process in which ingredients are prepared and organized (as in a restaurant kitchen) before cooking
most of this year has been about compiling, preparing, and arranging for what is needed and wanted for the next year. a focus on replenishing and essential downtime, and mostly healthy ways of letting off steam being better managed than the year before also took place.
i look forward to 2019 and feasting on a better organized life.

🥩 steak for monday’s supper. ¶ salted a good hour or so before frying in a skillet is my fave way of cooking up beefsteaks; rested at least 10 minutes from the pan, lest it bleed out on the cutting board. exterior charred to a deep mahogany, shiny and caramelized, don to medium-rare. downside is the thick steak that fills the apartment. ¶ not a #steakhouse steak, but rather a steak in my house. ¶ 🐮 just a common, supermarket steak—neither prime or dry aged or organically raised; i’ve no idea whether it’s grass or grain fed. this bovine is of unspecified provenance and ancestry, i’m sadly unable to distinguish between the taste of black angus, charolais or texas longhorns. ¶ this particular steak seasoned only with salt—sometimes crushed peppercorns, cumin seeds, chilies or ras el hanout gets used. boosting f*t with a drizzle of walnut oil, olive oil or a pat of butter, ups the steak game considerably. #maitredhotelbutter#compoundbutter ¶ 🐂 beef fat—aka #tallow—has a distinctive flavor to it. 🍟 i have vivid taste memories on how great mcdonald’s french fries back when they were fried in rendered beef fat—#legendary. lard certainly had its renaissance, perhaps it’s time for a tallow revival! ¶ when we were kids, popo used to spoil us with #spencersteak, fried in a cast iron skillet. popo’s no longer with us, but luckily i’ve inherited her cast iron skillet. #miseenplace#brooklynfood#brooklynsteak
