Prawn ghee roast. this is a mangalore speciality. i’ve never been there but there is a restaurant here that serves really good prawn ghee roast. i had gotten some fresh shrimp yesterday so i decided to give it a go. firstly, marinate cleaned prawns in salt, turmeric and chilly powder. add one large tomato, ginger, garlic, pepper powder and fennel seeds with some water and grind it to a smooth paste. heat oil in a pan ( i used my earthen pot), add in one large onion finely sliced. when it softens add three to four green chillies slit. let the onions cook properly, make sure it doesn’t burn or fry. when it’s starting to brown add in two teaspoons of chilly powder and half teaspoon of turmeric powder. let it fry for a few minutes. now add in the ground masala. add salt. let it bubble for five minutes. add water in the grinder and add the remaining masala too. don’t waste. now when i marinated the prawn i added a piece of kokum(optional) i like the kick of tanginess it gives. once the tomato’s raw smell is gone add in the marinated prawn and let it cook completely. in another pan, heat up some ghee, add few curry leaves and add the prawn masala to the pan with the ghee. mix it well. let it bubble for a minute or two. add one teaspoon of ghee on top before serving. it goes really well with appam. #happycooking#homechef#momchef#qatarbloggers#dohafoodies
