This week on #testouttuesday is for all you yogurt lovers who can't or choose to not consume dairy products. non-dairy yogurts have come a long way and now include almond, pea protein and coconut bases. -
our love for all things #coconut had us jumping for joy to try this coconut yogurt from @coyo_is_coconuts on the shelf at our local @fairwaymarket. we've tried other coconut yogurts before and have been let down in the past. but this baby did not dissapoint!
smooth, creamy, tangy and slightly sweet, this #nondairy yogurt is one of the only brands that has our beloved #mango as its star flavor. good for your conscience, great for your gut we are so happy we picked it up!
This chocolate zucchini bread can be a great healthier alternative to a sugar-filled birthday cake, and it’s amazingly simple! my 5 year old son helped make this for my birthday this past weekend 😋

🎂 chocolate zucchini birthday cake 🎂
total time: 1 hr 15 mins
1/3 cup raw honey
2 tbsp coconut oil plus more for greasing pan
2 large eggs
1 cup ripe banana, smashed (about 2 bananas)
1/4 tsp vanilla extract
2 cups oatmeal, blended into a flour
2 tbsp unsweetened cocoa powder
1 1/2 tsp baking soda
1 1/2 tsp ground cinnamon
1/4 tsp kosher salt
1 1/2 cups finely shredded zucchini about 2 medium zucchinis
1/2 cup semisweet chocolate chips (vegan for non-dairy)
chocolate frosting & sprinkles (optional)
1. preheat oven to 325 degrees.
2. grease a 9x5 loaf pan with coconut oil and set aside. (or bunny pan)
3. in a large mixing bowl, combine the honey, 2 tbsp. coconut oil, eggs, banana and vanilla extract. whisk together until well-blended.
4. add the oatmeal, cocoa powder, baking soda, cinnamon, and salt and stir to combine, taking care not to over-stir.
5. add the shredded zucchini and chocolate chips and fold into the mixture until well-blended.
6. pour the mixture into the greased loaf pan and spread evenly.
7. place in the oven and bake for 50-65 minutes, or until a knife or toothpick comes out clean from the center of the loaf.
8. remove the pan from the oven and let rest in for 10 minutes. if desired, transfer to a wire rack to cool completely.
9. frost with a light amount of frosting once cools completely & enjoy!
french toast was something i thought i had to give up as a vegan, but the key to this recipe is to use chickpea flour! if you don’t have chickpea flour you can simply make your own by grinding up raw chickpeas in a food processor! 😁
🌱 1 cup plant based milk of choice (i used organic almond)
🌱 1/2 cup chickpea flour 🌱 1/4 tsp cinnamon 🌱 1/4 tsp nutmeg
🌱 1/2 tsp vanilla extract 🌱 1/2 tsp ground flaxseed 🍞whisk together the non dairy milk and chickpea flour. once incorporated, whisk in cinnamon, nutmeg, flaxseed and vanilla until combined. there will be some small lumps left in batter, just make sure the bigger lumps are dissolved 👍 🍞 heat skillet over medium heat and add a little oil to cover bottom of pan. dunk your bread slices (i used dave’s killer bread bc it’s name speaks for itself 😍) into the mixture and cook french toast until each slice is golden brown, about 2-3 minutes per side! 😋
top with fruit, dairy free butter and maple syrup!
