Mild zinc deficiency is common in children and adolescents. it can contribute to concentration problems and learning difficulties as well as weaker immune system. not something we parents want.
did you know that green peas is an excellent source of zinc? i always have a bag in the freezer and use it to bulk up dishes.
i made a stroganoff style sauce last night with peas, mushrooms and broccoli. under that pile of vegetables is also hiding a piece of oven baked cod and rice πŸ˜‰ it was very simple and fast to make. plus for some reasons both my husband and son prefer to eat fish with sauce (unless it has breadcrumbs πŸ˜‰). so this weekday supper was perfect!
other ingredients: onion, garlic, sweet paprika, stock, sour cream, lemon juice, chives and salt and pepper.

I love using herbs with fish. it is one of the easiest toppings that adds depth and flavour. i used basil today for my salmon. just puree bunch of basil with extra v****n olive oil, pour over the fish, wrap in a baking paper and bake in the oven. add just a touch of lemon juice before serving. delicious! what is your favourite fish spice, herb or topping?

Did you know that mangoes can improve mood and sleep? they are an excellent source of b6, needed for serotonin and melatonin, happy bain chemical and sleepy hormone respectively. i use mango as my secret ingredient in the curry - this time alongside chicken, mushrooms, courgettes and peppers. plus onion, garlic, ginger, tinned tomatoes, coconut milk and spices. mango adds a lovely sweet flavour, so children will appreciate it too.

What to do with leftover mashed potatoes? potato cakes are a good option.you can use any vegetables, herbs, spices, as well as protein such as bacon, chicken, cheese, beans or fish. my ingredients: 3 cups mashed potatoes, 1 cup chickpea flour, 1/2 cup sweet potato flour, 2 eggs, 2 spring onions, 1/2 cup peas, 1/2 cup sweetcorn, 2 minced garlic cloves, handful of chives, handful of mint, 1 cup of grated cheddar, salt and pepper. i also added chopped turkey mince balls to half of them. just mix all ingredients, firm into paties and shallow fry. serve with salad. i also added gherkins as side - you can't take the czech girl out of me πŸ˜‰
