Tomorrow is national gluten free day!!!!!! celiacs is a disease, not a choice. gluten intolerance is an issue, not a choice. celiacs is a whole body impacting, life altering, daily disease that has no cure. i’ve lived with celiacs for most of my life, only being diagnosed at age 22. in the 12 years that i have known that i have celiacs, the gf world has grown leaps and bounds! it’s a million dollar industry and the alternative foods are getting better each day with each new brand or recipe. we as people though have a ways to go!
whether you are gluten-free or not, bringing awareness to this lifestyle is important in respecting those around you who are!
on halloween this year, a careless poke bar employee used the wrong soy sauce in my bowl even after i verbally confirmed 3 times. so i unknowingly and unwillingly ingested gluten. wheat is the 2nd ingredient in soy sauce. the symptoms of my disease took hold of me within 20 minutes and lasted a month. the pain in my stomach was so bad that i had to sit down and i could barely drive home. the next 3 days i struggled to get out of bed. my insides felt as if they had been ripped apart. the next week and a half, i walked slow, limping because the pain in my joints was so intense that it put me in tears nightly. it made me miss social gatherings and work. the brain fog that happens from it was making it hard for me to find words to carry on every day conversations with my employees and colleagues. over the next month, eating was hard as my insides were trying to heal from the gluten i had taken in and the sores it cause in my mouth were awful. the fatigue felt like i had not slept in months! it was a struggle and my trust of restaurants was again broken. my fear of eating out again was wild.
i tell you this, not for sympathy... i live a good life even though i’m living with celiacs! i tell you this because it’s national gluten free day and a little education goes along way for the safety of myself, my dad, my friends and the strangers who also live with celiacs disease. if you’re in the restaurant industry or know someone who is, share this to spread education!

this is my daughter with her friend hannah who was diagnosed with rheumatoid arthritis a couple years ago. she could barely walk up and down the stairs and couldn't open and close her hands.
unwilling to believe this could be the case for an eleven year old, her parents did their own research and pushed for further testing. she was diagnosed with celiac shortly after 🙏
i was thinking about this because today they'll be at a cast party for their school play and not able to eat a thing 😔 i'm so thankful they have each other for support, and we'll definitely be loading them up with treats from @thehappymixerglutenfreebakery 😋

Ahh, breakfast. lately its been making moves to becoming my favourite meal of the day. i love eggs, so so so much. but more than the eggs themselves, i love how simple it is.
for some reason, dinner can totally stress me out. i’m always trying to find new recipes that keep things interesting and it can be a real buzz k**l at times.
breakfast is the one meal where i can eat the same few things and never get sick of it.
these days my plate is always 75% vegetables, if not more. for today’s breakfast, i fried two eggs, broccoli, red pepper, onion, asparagus and leftover cooked sweet potato with evoo, cumin, paprika and himalayan salt. i served that on arugula with half an avocado.
so. good. so freakin’ easy. makes me so happy.
A beautiful 😊 sunny saturday in london and another high protein low carbs meal. today lean ham with an egg, horseradish and low far cottage cheese. quick, easy and healthy. have a lovely day everyone 😊
