Started off this short week with the tastiest pesto quinoa salad! homemade sauces like pesto are one of my favorite ways to shake things up and keep food exciting. i love using pesto on salads, pasta, eggs, roasted veggies and in wraps. this nut free + dairy free version is made with h**p seeds (a great source of omega-3 & omega-6 fatty acids + plant protein) and takes only a couple minutes to whip up.
3 cups spinach
2 cups fresh basil
1 cup h**p seeds
1/4 cup olive oil
juice of 1-2 lemons
2-3 garlic cloves
salt and pepper to taste
2 tablespoons nutritional yeast (optional but high recommend for that cheezy flavah)
blend ingredients on a food processor until smooth. you may need to stop to scrape the sides and then continue pulsing. season to taste and enjoy on everything!

I've spent most of my weekend in bed thus far 🤧 (thank goodness for a light day tomorrow too 🙌🏼), so now that i'm finally on the mend, i'm excited to get my #foodprep on tomorrow! i shared some of my favorites with you in my story tonight 👆🏼, but here's 1 more... my vegan lasagna! 🍝 i just so happen to have some @nasoya tofu in the fridge, and we always have noodles, so dinna is served in 45 minutes... and leftovers freeze great for busy weeks too! 💯 what are you prepping this week to make choosing nourishing choices easier?

Food allergy travel tuesday! bring your own safe food. .
we are at @waltdisneyworld this week with my mother-in-law. she hasn't been to disney in over twenty years! how things have changed?! disney is known in the food allergy community for being very accommodating to those with special dietary needs and we have not experienced differently. .
however, it's a huge place and not everything is available in a pinch. we ran into this problem yesterday when everyone wanted ice cream. there were no safe options for logan. that is why it's so important to bring your own safe food with you. no one wants to be left out, especially when it comes to dessert. don't put the scream in ice cream! #disneyfun#disneyworld#disneyfood#foodallergyawareness#anaphylaxis#beprepared#nonuts#nutfree#allergymom
