Started off this short week with the tastiest pesto quinoa salad! homemade sauces like pesto are one of my favorite ways to shake things up and keep food exciting. i love using pesto on salads, pasta, eggs, roasted veggies and in wraps. this nut free + dairy free version is made with h**p seeds (a great source of omega-3 & omega-6 fatty acids + plant protein) and takes only a couple minutes to whip up. .......... pesto ingredients: 3 cups spinach 2 cups fresh basil 1 cup h**p seeds 1/4 cup olive oil juice of 1-2 lemons 2-3 garlic cloves salt and pepper to taste 2 tablespoons nutritional yeast (optional but high recommend for that cheezy flavah) ........ directions: blend ingredients on a food processor until smooth. you may need to stop to scrape the sides and then continue pulsing. season to taste and enjoy on everything!
