erika.easy.recipes Salted caramel sticky pecan scrolls, so easy to make and taste great, with the sticky hot salted caramel toffee sauce over the buns. laced with a caramel and touch of brandy , raisin filling, this sticky bun is really good. to make these scrolls, i make a basic dough recipe that i use for my donuts. while the dough is rising make the creamed caramel filling, 1/2 cup chopped raisins and mix with 1 good tablespoon brandy ,set aside for 10 mins, now in a mixmaster add 100g butter/ marg, 1/3 cup dark brown sugar, 2 teaspoons ground cinnamon, 1 teaspoon ground nutmeg, 1 teaspoon grated orange rind, beat all together till lovely and creamy, now add drained raisins, mix well again. dough on a floured surface roll your dough out to 40x30cms, spread creamy raisin filling on dough leave about 1 " around the edge of the dough. now roll up long side facing you, nice and firmly. trim each end of the roll to neaten up. now cut the roll in 12 even pieces. place on a baking pan 28x 18cm that you've lined with bake paper. face scrolls upwards so you can see the scroll pattern. put in warm place to double in size about 30 mins. before baking brush with egg and 1 teaspoon water mix well, brush scrolls just before baking oven 180 fanforced bake for 15 mins till the buns are lightly browned, cover with foil for about another 15 mins or till the scrolls lightly tapped sound hollow. while scrolls are in the oven make your salted caramel sauce, in a saucepan put , 120 butter/ marg, 1/2 cup dark brown sugar, 1/2 cup pouring cream, 2 tablespoons golden syrup and 1/2 teaspoon sea salt. stir till all melted together, now turn up heat till the sauce boils, keep stirring, once boiled turn down to medium heat and cook for 10 minutes till the sauce reduces to about 1/2 of what you had and has thickened. chop 1/2 cup pecans or walnuts. once scrolls are baked take out the oven pour over salted caramel sauce and sprinkle with your chopped nuts. soo good.#saltedcaramel#caramel#scrolls#stickybuns#brandy#raisins#cinnamon#nutmeg#butter#brownsugar#walnuts#pecans#hotbuns#freshlybaked#freshtoday#homebaker#homemade#sogood#fingerlickinggood#soeasy#tastegreat#stickybuns#family#friends.
