Spring has sprung which means rhubarb is hereee !!! 😍 and that means we can make some raspberry rhubarb bars! πŸ™ŒπŸ» they have an almond flour crust with an almond frangipane topping, and all the rhubarb and raspberries piled on top.

When it's national pretzel day...you obviously need sprinkles and vegan white chocolate! @madhavasweet .

ingredients
3/4 cup cup raw cocoa butter, grated or finely chopped
1/3 cup coconut karma coconut oil
1/4 cup madhava coconut sugar
1 tsp vanilla extract

directions
in a double boiler, gently melt the cacao butter over medium-low heat. make sure to stir frequently. mix in the coconut oil until both oils are uniform in texture. add in the sugar and vanilla and use a whisk to help the sugar dissolve. when slightly cooled, dip in gluten free pretzels and adorn with vegan sprinkles. all is good in the world. ☺️

2 ripe avocados
1/4 cup cacao powder
2 tbs granulated @lakantosweetener monk fruit
2 tbs water
1 tbs nut butter (i used @wild_friends super butter)
1 tsp vanilla extract
1. using your high speed blended and the tamper wand, blend the ingredients until completely smooth.
2. transfer to a bowl and add toppings! i did @wild_friends peanut butter and @maldonsalt1882 flaky sea salt🀀 enjoy!!!!!

The theme of this breakfast is just “messy” πŸ˜‚πŸ€·πŸΌ‍♀️ my sweet toast got a little out of hand with toppings and my yolk broke when i put it in the skillet but that’s just life πŸ’πŸΌ‍♀️ still tasted absolutely delicious 😎 kiwis are finally looking good again so i stocked up on a few for the week πŸ˜‹ i love having them as an easy snack! or on yogurt toast with all the pb and granola 😎 of course i ate the egg on the avo toast because there’s no other way to do it πŸ‘ŒπŸ» eli had a similar breakfast but much simpler because he doesn’t like avocado or loaded toasts (i know, who is he?) now i’m going to go get a run in before class πŸƒπŸΌ‍♀️ and hopefully convince eli to get a walk in later this afternoon because it’s supposed to be so nice β˜€οΈ happy fri-yay friends!!! πŸ’• —————————————————————- #breakfast details πŸ‘‰πŸ» 2 slices of @mikeys paleo toast (soooo good!!) 1 topped with mashed avocado and the other topped with @siggisdairy plain yogurt + kiwi + mashed blackberries + @gr8nola + organic pb and then one egg fried in @fourthandheart ghee ❀️

i love corn tortillas for my tacos, but they just don’t seem to sit well in my tummy! so i just replace the tortillas with lettuce leaves! they ar bigger and hold more stuff anyway!! πŸ˜‹πŸ˜œ

so these shredded chicken “tacos” went down for dinner! i put chicken b****t in the instantpot, cooked it for an hour under pressure, shredded with two forks and then left it on slow cook for another hour while we went to dance class. .
.
i topped mine with sour cream, avocado, homemade salsa, leftover shredded cabbage salad and valentina mexican salsa!! it was simple, quick and best of all delicious!!

he did his research and this company was legit so he told me it would give me a platform to reach and serve more people. i said no. it’s a scam. i don’t want to lose my brand, i can do this on my own i don’t need a company. who are these “coaches” anyway? πŸ™„

but we were tens of thousands of dollars in student loan debt and personal training just wasn’t putting a dent in it. i didn’t love the crazy early morning and late evening hours and knew it wouldn’t be sustainable with babies. plus, i did desire to stay at home with them and not miss a beat but still have something to be passionate about apart from them.

i say thank you. for being in this with me. for helping me to focus on my purpose and calling when fear and doubt set in. for making me do heart checks to point me back to jesus. for helping me lead our team. for encouraging me to try this coach opportunity that will allow us to live debt free! one my plate: 1 cup homemade kale chips (kale, little spray of @traderjoes coconut oil spray, salt and pepper roasted at 400 for 7 minutes), roasted cauliflower (same process as kale but in the oven for 20ish minutes) and a really yummy @therealcoconut tortilla stuffed with avocado hot sauce blend i made up on the spot, spinach and oven roasted chicken breast! can you say happy belly?!! ~300 caloriesπŸ’ͺπŸ˜‹πŸ’•πŸ₯₯πŸ₯‘

Dinner tonight was πŸ”₯ i have found a fool proof way to make salmon. not to brag, but it’s pretty great every time πŸ˜‰ preheat oven to 475f with sheet pan in the oven, take pan out (with oven mit πŸ™ƒ) and put ghee on pan. let melt, and then put salmon in ghee. sprinkle with salt and pepper (sometimes we use lemon, too) and put in oven for 9-10 minutes. that’s it! i promise it will come out velvety smooth every time πŸ‘ŒπŸΌ
