Do you know someone who doesn’t love mexican food? ๐Ÿ‡ฒ๐Ÿ‡ฝ give this question a thought while reading on about some créme de la créme (or shall i say la flor y nata) of a’dam mex food scene. there are two spots we go when we crave some beanzz, rice, pico de gallo and double-guac ๐Ÿฅ‘+๐Ÿฅ‘. let me introduce the budget version first - as we’ve spend way more time here - student budget restrictions amigos ๐Ÿ™ˆ. even though this isn’t really a “hidden local gem” (turns out it has the first spot in google search for “best burrito in amsterdam”) @californiaburritoamsterdam does not have long waiting lines and serves perfectly authentic, “fat” and juicy burritos. in addition, it has the ideal location - right in front of the city’s best coffeeshop. ๐Ÿ€+๐ŸŒฏ=๐Ÿ‘ผ๐Ÿป not that i’m suggesting anything...
i’ve tried the #originalchicken in my pre-vegan era and the #pintobeans w/o sour cream most recently. loved them both but definitely recommend the veggie option to keep our bellies full and planet happy ๐ŸŒฑ pro tip: take the guava jarritos and enjoy the combo sitting on one of the nearby canals. you’re welcome friends. and i bet you do not know a mexican food hater after all, right? ๐Ÿ˜„

๐ŸŒฎ1cup #maizeflour ๐ŸŒฎ1tbsp oil (refined/olive)
๐ŸŒฎsalt to taste
kneed the ingredients with warm water till it forms a soft dough. roll it out with a rolling pin, with the help of a cookie cutter or a simple bowl of diameter, approximately 4 inches, cut circles, deep fry these and give it a concave shape around the rolling pin! taco shells are ready! and...
for the mouth-watering taco filling: ๐ŸŒฎ1cup pinto beans (rajma) boiled with garlic salt, mash them a little.
๐ŸŒฎ 1cup minced #shitakemushrooms with cumin powder, paprika, garlic salt and mexican taco seasonings(pic in #mystory)
mix the boiled pinto beans with the minced mushrooms! to this add the rest!
๐ŸŒฎ1big bowl of #gaucamole (mashed avos+ finely chopped onions, tomatoes & green chillies+garlic salt+lime+ sage+mint+coriander+oregano!)
๐ŸŒฎ1/2 cup plumcot salsa (recipe in my previous post!)

Throwback to this delicious stuffed sweet potato. yes, i realize more than probably half my feed is stuffed sweet potatoes, but it’s what i like. i started this instagram to share what i eat with others to inspire them and show them how easy and healthy plant based meals are. personally, i don’t love decorating my oatmeal or eating smoothie bowls, so that’s not what i post. i want to be as real as i can with you all. although a lot of plant based people love smoothie bowls and post tons of pictures of them, i don’t personally like them, so i don’t make them or post pictures of them. it’s that simple. i post what i want. i know i post a lot of pictures of potatoes, beans, and avocado, but that’s what i like, so that’s what i post. just because you’re plant based doesn’t mean you have to eat tons of potatoes or avocados or oatmeal or smoothie bowls. find what works for you, and eat it. there is no denying the fact that we all need carbs, protein, and fats, but how you get them is completely up to you. if you like nuts and seeds more than avocado, eat more nuts and seeds. if you like tempeh better than chickpeas, eat more tempeh. as long as you are eating enough and enough of every macronutrient(all are bodies are different so this may vary), you are set. i do recommend eating certain foods like nuts and seeds because they have such great benefits, so if you don’t like almonds, try cashews or sesame seeds. if you’re like me and don’t like many nuts or seeds, go to the bulk section and buy a few of each type and find what your taste buds like best.there are so many different plant based foods that there really isn’t any excuse to not get enough protein, fat, or carbs. eat what you enjoy! what’s your favorite food?
