Summer rolls 🌈🌼 a mix of white + brown rice vermicelli noodles, peanut satay tofu strips, avo, cucumber, carrot, capsicum and mango 😍 drizzled with a maple + tamari glaze and sprinkled with organic black sesame seeds. this was the best peanut satay sauce i've ever made and was from @thrivingonplants incredible ebook πŸ™ŒπŸΌ

Focusing on the problem can fell completely overwhelming 😞... i know when i look at the horrific plastic crisis that we have created, the statistics on climate change, the timeframe for empty oceans, deforestation, animal extinction, exploitation, cruelty + all of the rest ... - i feel like it all just too much to try and fix. 🌱🌏then i look at solutions and focus there; i remember my why (my little munchkins and the quality of life they will or will not have - depending on what we choose to do now) and then i think of new things that i personally can do every•single•day. πŸ€”
on sunday, we were walking to the market and some kids were kicking around some styrofoam that had fallen into the marina (tide was out). i bent down and said “hey guys, do you want to pass that up here and i’ll pop it in the bin??!”. they did, and then they actually looked for anything else that needed to be cleaned up. you can look at this as one piece of styrofoam, big deal.... or... one less piece of rubbish in the water, that is a big deal! ... aaaand - these kids stopped kicking rubbish around and looked for more to pick up πŸ‘πŸΌ. rethink the situation.
if everyone picked up rubbish - what a difference that would make.
this is one mini example. we can all do something and then we can do more. πŸŒ±πŸ’¦ - plus do you know what makes the biggest difference and tackles most problems in one? eliminating meat and dairy from your diet! πŸŒ±πŸ™ŒπŸΌπŸŒ± ... rethink food - why not!? #eatfortheplanet #veganism #makeadifference ••••

[food] make sure to never throw away leftover/ slightly wilted greens as you can blend any into a savoury pancake batter ♻️ and make for example these chickpea + spinach pancakes topped with salted tahini, steamed sweet potato, cucumber strips, micro arugula + avocado πŸ₯‘

i'll be having this smoothie bowl in a moment. usually, i have porridge/oatmeal, quinoa or brown rice topped with fruit and veggies for breakfast but today, i felt like having my greens instead. the smoothie was made with kale, bananas and flax seeds. to get a nice, thick and filling texture, i also put some oats in the blender and only used a bit of water. i then poured it in a bowl and added coconut yoghurt, grapes, goji berries as well as a banana and sprinkled it with a few coconut flakes.

Iranian tahdig (#veganstyle πŸ˜‰). for those of you who know what this is - you will know it's one of the best simple pleasures ever. iranians intentionally "burn" the rice in a rice cooker so it comes out like a crunchy cake with warm fluffy rice inside 😍

cook rice with water, salt and oil in the rice cooker, drain then oil up the rice cooker and recook. my mum and aunt have been spoiling me with this good stuff. some people cook this with butter but if you can be #veganfriendly and tasty using oil you might as well! πŸ’š

I woke up with a neck spasm and have been miserable ever since. i've also lost feeling in both my arms. husband fed me a load of roasted vegetables and everything was right in the world for the 30 seconds it took me to inhale the goodness. πŸ˜’
