Instant potato soup...
i had honestly forgotten about this awesome recipe until a friend talked about it the other day. this soup is really good... it is the perfect low point late night snack. for me it’s the perfect “almost time to go home” snack at the end of my work day. it’s warm, and thick, and comforting. you can eat it with a spoon or drink it on the go.
this recipe dates back to an earlier version of weight watchers... at that time it was 2 points a cup. now... it calculates at 3 points. but it’s worth it.
you can add a bit of f*t free cheese right before you eat it (0 points) or add 3 ritz wheat crackers (1 point).... it’s delicious.

I’m a sucker for a recipe with a story. my mother’s potato soup has a story, of course it does. in the mid 1960’s, my mother worked at a school. every day, a chef came in to cook lunch. inexplicably, the meal was only for students, and the faculty and staff could not partake . my mother told me that at least once a week, they served a yellow soup, with potatoes and thin noodles inside. she was never able to taste it, but each week, she told me, it smelled so delicious, that she would go home and improvise a similar soup for her supper. since she never tasted the original she had no idea how hers compared, but this is her version of the famous soup. in my mother’s kitchen, this soup was made in a yellow enameled cast iron p*t that matched the color of the soup exactly. as a child, i believed that it was the soup that had somehow imparted that brilliant yellow finish to the pot.
