This roast chicken 🐓 dinner was well worth the wait 🙌
•i diced up 2 potatoes (1 medium, 1 small), about a pound of brussels sprouts, half an onion and placed them in an oven safe dish
•season the veg with olive oil, salt, pepper and garlic powder- toss to mix well •pat bone in skin on chicken b*****s dry with a paper towel, season with the same spices as the veggies and place them in the baking dish
•i put pats of ghee all over the chicken and veggies and sprinkled with italian seasoning •cook in a 350 degree oven for an hour and ten minutes
i use a meat thermometer to make sure my chicken reached 165 degrees internally. i also let the chicken rest before cutting into to- don’t want to lose any of those juices! this is a meal that does take some time and effort but on this lazy tuesday i had all the time in the world! happy tuesday 🖤
