Hello from vancouver everyone 👋🏼🇨🇦. apologies for being mia these past few days. leaving new york to come back home after 4 years away hasn’t been the easiest emotionally. it’s going to be a big adjustment but i’m trying to stay positive + excited for what’s ahead. i have yet to cook since i’ve been back as i’ve been busy trying to find a new apartment 😁, so sharing a simple salad i made before i left 🥗. this bowl has mixed baby greens, a hard boiled egg, steamed baby beets, crumbled blue cheese, avocado, pecans + a homemade balsamic vinaigrette. have a great evening loves 💚💚
Alllll i ever wanted in a lunch happening right here! my favorite meals are usually ones that don’t require any real cooking, are full of fresh ingredients, & leave me feeling super satisfied + energized like this summery quinoa salad. don’t let the simplicity of the ingredients in this meal fool you - this bowl brings the flavah 🔥
makes 5-6 servings:
1 cup uncooked quinoa
3 small bell peppers, diced
1 large english cucumber, diced
1/2 red onion, finely diced
2 cans chickpeas, drained and rinsed
1 large bunch of flat leaf parsley, chopped
1 cup sliced almonds
3 cloves minced garlic
1/3 cup olive oil
juice of 2-3 lemons (use 2 and add a 3rd if needed)
3 tbsp red wine vinegar
1 tsp red pepper flakes
salt & pepper to taste
combine all ingredients in a large bowl and enjoy!

An easy (and delicious) dinner is what’s on the menu tonight - leftover grilled salmon over @organicgirl protein greens tossed with herb goddess dressing with roasted sweet potatoes seasoned with @primalpalate new bae seasoning and roasted broccoli with garlic.

Today was one of those crazy days where i actually forgot to eat lunch.. like wut!? i don’t think i’ve done that like ever! i usually plan my whole day around my meals and i just was so busy today that it didn’t get done... happens to the best of us i guess ☺️ tonight i am making myself a super nourishing dinner, packing for chicago tomorrow, relaxing and prob watching some oc episodes bc it never gets old. some major me time 💕 this salad was one of the delish meals that @thehealthy_b and i made last weekend at my cabin 😋✨ hope everyone has an amazing night! .
Stop thinking that you have to starve yourself to lose weight. stop thinking that you have follow the newest fad diet to lose weight. stop thinking that you have to eat boring, repetitive food to lose weight. stop thinking that you can’t lose weight unless you do hours of hiit. stop thinking you can’t lose weight because your metabolism won’t let you. stop thinking that you can’t lose weight because you can’t afford ‘superfoods’.
none of these things are true.
you can lose weight. you can get healthier. you can do it in a sustainable manner. it is possible.
