💫 lemony shrimp with garlic butter and cherry tomatoes 💫
this is a great elevated lower carb week night dinner which takes very little effort and just six ingredients. rejoice - you don't even have to get a cutting board out as there's no chopping required! 👌
1 lb shrimp
2 tablespoon butter
sea salt and pepper
1 punnet cherry tomatoes
1 pack of ready made zucchini noodles (or two zuchinnis spiralized)
basil leaves (optional)
👉season the shrimp and in a medium skillet cook them in butter for around 2-3 minutes until they turn opaque (which means they're cooked). 👉 gently stir in the garlic and lemon juice 👉 remove shrimp from pan and reserve on a plate
👉 cook tomatoes in same pan for around 5 minutes until they are starting to burst open.
👉 remove on to same plate as the shrimp.
👉 now cook the zoodles for around 2 minutes - then place the shrimp and tomatoes back in the pan to re-heat for a minute.
👉taste and season - add more lemon juice or butter if desired.
👉 serve with zoodles or pasta.

Rice noodles with simmered shrimp and bok choy, in a coconut curry broth that’s tangy, mildly spicy, and 100% comforting. this dish comes together quickly and has lots of textures and flavors working well together. give it a try, especially if you’re feeling under the weather 🤧😪 (like me)
serves 2-ish: in a large saucepan on medium heat, sauté minced shallot and garlic in neutral oil until fragrant and softened. add in 1-2 tbsp yellow curry paste and stir around until it has slightly darkened, about 1-2 min. pour in 1 15oz. can of coconut milk and 1 ½ cup of chicken/veg broth or water. stir to combine with the curry paste mixture, cover and simmer for about 15-20 min. (if you have more time, 30 min. works too!) to let flavors combine. meanwhile, prepare rice noodles according to package directions and keep warm. use about half a pack for two servings (about 8 oz)
when curry coconut broth is ready, season it with a touch of fish sauce. taste and adjust seasoning or add more water if needed. keep the broth on the heat, add in a dozen peeled + deveined shrimp and then the bok choy (or your preferred veg). simmer until the shrimp has turned opaque and pink and the veg is tender but still green.
turn the heat off and immediately stir in the prepared rice noodles and juice from 1 lime. the lime is super important in completing the broth! divide noodles, shrimp and veg between bowls, top with cilantro, scallions, chopped roasted peanuts, chili garlic sauce and store-bought fried shallots (bc nobody has time for homemade ones on a weeknight 😅). serve right away with more limes and fish sauce at the table.

Shrimply the best. steaks are obviously king at beef n bottle, but i am such a sucker for their shrimp scampi as well. i recommend always getting a combo. pro tip: you can make any steak a combo, not just the filet. 🥩 🍤 🍸
I enjoyed my freestyle fusion noodle bowl 😊 i used 10 jumbo tail on shrimp (you can remove the tails if you prefer). season the shrimp in a bowl with 1 tsp of smoked paprika and 1 tsp of light soy sauce. i sauteed 3 finely minced garlic cloves and 1 tsp grated ginger in 2 tbsp of avocado oil and a pat of butter until softened and added the shrimp. when almost done i added 1/3 cup mirin, 1tbsp sesame oil and salt and pepper to taste. i seasoned my cooked noodles with red chili sauce, fish sauce, garlic paste, and sesame oil to taste. my salad is a chiffonade of romaine lettuce (stack 4 leaves of the green part of the lettuce and roll tightly into a tube shape. cut across the end of the tube to produce ribbons of lettuce) and combine shredded carrots, bean sprouts, cucumber, cilantro leaves and season with olive oil, rice vinegar and a pinch of sugar. my eggs are a little messy, but good. 😀🍳 #food#noodles#shrimp#yummy#foodphotography#mirin#homemade#recipes#foodporn#photooftheday
