A quick & simple homemade mac & cheese. no cheese- just nutritional yeast, pepper & a teeny bit of curry powder (for something a little different). teo demolished it but harley did t like it (very unusual- but he hasn’t been well) so he had broccoli balls.... again 🙄
I secretly wish it was a lobster roll, but if dinner had to be anything else i’m pretty okay with the fact that it was these ridiculously colorful chicken & veggie kebabs. so yummy! 🤤
ingredients + 1/2 red onion + 1 small zucchini + 2 roma tomatoes + 1 yellow bell pepper + 1 cup sliced mushrooms + 2 small chicken breasts
chop everything up into bite-size pieces and toss in olive oil, salt and pepper. stack and alternate ingredients on kebabs and grill on high or bake at 375º for 20-25 minutes.

Simple dinner when the wee one is sick again!!!! i’m so good at cooking with him on the hip.... doing everything with him on the hip 😳
anyway, quinoa, broccoli (which i steamed then threw in last to save time), tofu & leek fried in olive oil with a splash of balsamic vinegar, a teeny spoon of honey& a large spoon of peanut butter. i wish i could have added some fresh chilli to mine but honestly i couldn’t be bothered & it was delicious anyway. the daddio, who said he wanted leftover curry instead, ended up eating a huge bowl & said it was awesome & asked if i could make it for his parents at during our christmas visit. they’re big meat eaters.... but i’ll give it a go 😂😬
