🍲sesame kelp noodles🍝 .
being on this low carb diet is super hard for me, especially because i love my vietnamese noodles. been eating a ton of salads, but it's not the same as a bowl of beef pho! i heard about all the alternative noodles out there -shiratake, tofu, and kelp noodles. so tonight i decide to give kelp noodles a try. .
had some frozen veggies and cooked pork, so i decided to do a noodle veggie stir fry. it was pretty easy to make, basically a one pan meal. .
the noodles are pretty good. when i first tasted it, there was a slight crunch, but i let it cook for a while and now i can't really tell that it's an "alternative" noodle. taste like glass noodle or clear vermicelli. it's a quick and easy dinner to make, and a bonus because it's low carbs and loaded with veggies and portein!
A new veggie for me: jicama (turns out it's pronounced hih-cuh-muh. not jih-cah-muh like i said to google). it doesn't peel very easily either, fyi.
no matter how long i cooked it, it stayed crunchy. has the texture of a water chestnut but tasted much better.

onions, bell peppers, carrots, and baby corn all cut into thin s***p broccoli florets
for the sauce:
3/4 cup broth of your choice
1/4 cup fresh orange juice
2 tablespoons low sodium soy sauce
1 tablespoon cornstarch
1/2 teaspoon sugar
3 garlic cloves, minced
1 tablespoon fresh grated ginger
