Running the fall soil samples for the homestead. i'll be dropping them off to the extension office tomorrow morning. since i have been amending the soil here with organic matter for a few years now, i wanted to see how much (if any) measurable improvement i have made... so i am sending in a sample from the amended beds and a sample from the unamended soil to see how they compare. swipe across to see which is which! .
what i noticed - the amended soil is slightly darker but not as much as i had hoped. the biggest difference is the texture. the amended soil is softer, lighter, and feels more moist. we'll see how it fares in testing 😊 fingers crossed.
Chocolate and peanut butter are always a great pair, right? but for this ohio gal, buckeye balls are better. long before my medical nutrition license put letters after my name or developing an interest in better nutrition, these balls (loaded with butter, sugar, and flavored with some vanilla) meant game day in o-h-i-o. i'm so happy to be back in columbus for a public better nutrition workshop (join me buckeyes @ 630pm tuesday at wellington) as well as a few private talks. and of course, finding time to fit in spa time with my high school gals and head to @galloskitchenandbar so now that i am a dietitian do you think i pass on the buckeyes?! no way! because better nutrition better be delicious, two of these hits the spot as a better game day treat for me.
and i found a delicious plant-based recipe in case you decide you need these more often (also works for gluten-free, dairy-free nutrition plans) thanks @veganversion !! buckeye balls
1 1/2 cup creamy peanut butter
1/2 cup earth balance vegan buttery spread, softened
1 tsp vanilla
3 cups confectioners sugar
2 tbsp earth balance shortening
6 oz vegan chocolate chips (i used ghiradelli brand semi sweet)
in a bowl mix the peanut butter, earth balance and vanilla. sift the confectioners sugar into the bowl. with your hands mix all ingredients until a stiff dough is formed. line a baking sheet with wax paper and roll the peanut butter mixture into balls, using about 1 1/2 tsp worth of peanut butter dough for each ball. place on the wax paper lined sheets and put into the refrigerator.
in a double boiler melt the semi-sweet chocolate and shortening until very smooth.
remove the peanut butter balls from the refrigerator. with a toothpick pick up one ball at a time and dip it into the melted chocolate mixture. return to the wax paper chocolate side down. place the sheets back in the refrigerator for 30 minutes to firm up.
keep extras in the refrigerator (that is, if you have any left!).
