๐ŸฅŸthese gorgeous little pasta parcels are a menu staple in northern italy. they’re made with thin, almost translucent pasta and filled with all sorts of delicious ingredients (including of course spinach and ricotta!). these had roasted beetroot, baby pink turnip and poppy seeds in them - served with brown butter and a very light sprinkling of parmesan - delicious ๐Ÿ˜‹. we ate them as part of our tasting menu at la siriola, one of 11 high altitude michelin starred restaurants in northern italy - a real treat! after 5 fantastic days hiking in the mountains, we’re now on our way to venice ๐Ÿ˜Š

1/4 cup bell pepper minced

this was the second main dish for the 4 course set menu. i never realized how much i enjoy pigeons until i ate this dish. pigeon was roasted perfectly; crisp skin with an earthy rustic hint. peas puree was so smooth and a great accompaniment to the pigeon. despite the different cooking technique employed, onions are once again used as a side which i felt was a bit repetitive. the caramelized onions here had a subtle smoky flavour to it unlike the onion compote in the previous dish. however, i was still hoping for something different such as a vegetable element. nonetheless, a great dish packed with intense flavours which i really enjoyed.

if you love the flavours and aroma of lemon grass, coconut, galangal , fish sauce , tom yum sauce and many in thai cuisine , then #neungroi is the place . yesterday i was invited for tasting their new menu and i had been told , the chef has 30 years of experience and it shows very well in her dishes . all the six dishes which i tried were super delicious.

let me drool you all with a detailed description of the dishes which i had . in starters i had moo thod khatein( deep fried pork belly with garlic and pepper sauce ) and crispy fried prawns with pok choy and brown onions . in main course i asked chef to serve me pork ๐Ÿ˜›. so southern style pork with white ginger , young pepper corns , basil and kafir lime was served with tom yum flavoured rice with chicken . drooling ?
now come to dessert . it was everyone's favourite , khao niew manung which is sticky rice cooked with pandan leaves and served with fresh mango and coconut milk .
although i was so full but agreed to go for another dessert . it was tub tim knob - water chestnuts pearls in coconut jasmine syrup . i can go there again to have their desserts as my main course. chef orawan piyapaisanskul is very simple and brilliant in her skills . it was so good to meet her . have already made a plan with my friend to visit neung roi soon . cnt wait to try other dishes .

๐Ÿ‡ช๐Ÿ‡ธ this throwback thursday again brings me back to barcelona and course 15, 16 & 17 of the 22-course avant garde menu (210€) at abac.

course 15 is a duck sequence including a broth infusion, ninyoyaki rillettes and foie. the foie gras was presented on a crunchy bread which was touched with a bit of sweetness from the honey glaze. on top of the bread, there is a generous amount of grated foie which was light and sweet. the ninyoyaki rillettes were cooked perfectly. the meat inside the ball was so finely ground up that it had a ridiculously light, soft and fluffy texture while still maintaining the intense duck flavour. the outside of the rillette was fried in foie gras making it extremely aromatic and having a light and crunchy texture. to finish off the course was the warm infusion of duck broth. the infusion was actually partially prepared at the table a few course prior. dried duck is immersed in a boiling p*t of sea water which releases all that concentrated flavour into the surrounding liquid, thus creating a comforting and earthy duck broth.

course 16 is the duck magret topped with a coriander jusmixed with lavender and served with baby carrots with a romesco sauce made with carrot escabeche jus. i found this course a bit underwhelming. the duck was a little dry at the edges. the crunchy carrots were good and provided a textural and flavour contrast and the romesco sauce was creamy and tangy. however, overall, i was not wowed by this dish.

course 16, was even more disappointing. the suckling pig's snout with acidulated cucurbits was tasty but uninspired and was basically the typical suckling pig found in chinese cuisine. the skin was crisp and underneath was a thin, pillowy layer of clean, sweet fat. it was paired with a pickled cucumber and the acidity helped to cut into the fattiness of the pork giving a light refreshing element to the dish. the flowers were also edible and provided a bit of freshness. nonetheless, i found this dish to be quite disappointing given that i could easily get a suckling pig of this quality in many restaurants around toronto.
