Lunch today was a healthier twist on the traditional maharashtrian fasting dish, बटाट्याचा कीस i.e. spiced potato hash🍴
i lightened up the original recipe by swapping the shredded potatoes with spaghetti squash that i cooked in the #instantpot and then followed the original recipe by sautéing it in ghee/oil tempered with sliced cumin seeds and freshly picked serrano chilies from my garden (see my stories for a picture of my “hot 🌶 harvest”)

Lagdi lahore di aan? chole or cholay, however you spell it, is quintessentially punjabi. you have pindi chole, amritsari chole & lahori cholay. interestingly, lahori cholay is what we call ‘chole’ at home - it’s the one with a thin tomatoey gravy, that we often eat with rice. i suppose that’s because my family came from lahore. what we rarely make however, is this beauty murgh cholay, which is eaten in lahore with puri or naan - very common dhaba food & 100% lahori. whether india lost this in partition, or it was invented in pakistan after 1947 (like butter chicken was in delhi) is something i still need to learn. oh, what i would give to visit lahore! generations of my family’s history live within the city’s structures, most of which are still standing. the clock tower, the chowk, the store showroom, the homes - i desperately want to see and touch them all. like delhi, lahore has a long and illustrious cultural and political history: it was home to the mughals, sikhs and then the british when punjab was annexed. tonight, dr. nadhra khan from lums will give us an insight to lahore’s sikh architecture, the annexation of punjab & the significance of the city. please join us tonight at 8pm ist live on third culture cooks’ facebook page. to learning more, together; to keeping our stories alive, forever. 🙏🏼 😃 - r.

Kimchi bacon rice balls.....i think this is all the good things in the world put together.
bacon makes everything better. a super cheesey and creative interpretation of arancini. we ordered the sampler plate when went to @thehangoverpub. it included bit sized versions of their most popular starters: 2 crab rangoons, 2 chicken fingers, 2 bbq ribs, 2 pieces of "man candy" which is candied bacon, kimchi bacon balls, and some pickled veggies.
unfortunately, we were told that they were out of the bbq ribs but they could swap it for something else. also the platter did not come with the pickled veggies, which honestly could have balanced it better. as a whole, it missed the mark, but the rice balls were good.
A delicious oven-baked side dish that is a gooey beautiful mess from plastering it with brie cheese and coating it with parmesan breadcrumbs. this breaded cheesy cauliflower is loaded with flavor through and through. it sits perfectly confident next to any entree you place on the table. but actually, you can thoroughly enjoy this fantastic dish all by itself.

✨ thank you foodie fam for your continued support!!! i recently hit 6k followers despite being off-grid last month on a road trip, this is craziness! 😮 i’m back in civilization...but self-isolating as a precaution, so unfortunately i won’t be cooking anything. i’ll be posting more photos from my road trip and backlog in the meantime! here’s one from brunch at @blujamcafe in the middle of hollywood. this is their signature dish for good reason because i’m in love with how they got the french toast so crunchy on the outside and soft on the inside! the vanilla bean sauce was also the perfect amount of added sweetness. i’ll have to try to make my own version of this french toast because it was an absolute home-run!

Still baking. this is a slightly cakey version of a middle eastern favourite called #basbousa. the original is a dense semolina cake, flavoured with an aromatic, sweet syrup. my version has more flour and the syrup is complimented with a generous dusting of @gewurzhaus cardamom pistachio sugar and even more pistachios. i love this cake for the flavours - and because it’s very quick and simple t make. 😁 #cake#middleeasternfood

Coconut curry shrimp noodz combine all my favorite flavors into one dish. caramelized shallot, ginger, and a spicy kick from jalapeño get simmered with coconut milk and red curry paste. finished off with some pan seared shrimp, fresh snap peas, lime juice, and chopped cilantro for a flavorful and easy dinner! if you’re ready to make this for din, here’s how 👇🏽⠀⠀⠀⠀⠀⠀⠀⠀⠀
shrimp coconut curry noodles⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp olive oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
3/4 lb large shrimp, peeled & deveined⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 shallot, peeled & chopped fine⠀⠀⠀⠀⠀⠀⠀⠀⠀
1.5” piece of ginger, peeled & minced⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 jalapeño, chopped small⠀⠀⠀⠀⠀⠀⠀⠀⠀
salt & pepper⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp red curry paste (favorite brand is mae ploy)⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 can coconut milk (full f*t or reduced fat)⠀⠀⠀⠀⠀⠀⠀⠀⠀
½ lime, juiced (~1 tbsp)⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tsp coconut aminos (or sub soy sauce)⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp coconut sugar⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup snap peas, sliced on the bias⠀⠀⠀⠀⠀⠀⠀⠀⠀
¼ cup chopped fresh cilantro⠀⠀⠀⠀⠀⠀⠀⠀⠀
10 oz pad thai noodles (i used @lotusfoods ), cooked according to package instructions⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. in a small mixing bowl add peeled & deveined shrimp, olive oil, shallot, ginger, jalapeño. stir to combine and sprinkle with salt & ground pepper.⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. heat a medium cast iron to medium heat and add shrimp, cooking for 5-7 minutes total (shrimp should be tightly curled). remove from pan and set aside.⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. add curry paste and stir to combine. add coconut milk, lime juice, coconut aminos, and coconut sugar. simmer for 10-12 minutes to allow sauce to thicken.⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. while sauce is cooking, prepare rice noodles according to package instructions and set aside.⠀⠀⠀⠀⠀⠀⠀⠀⠀
5. after 10-12 minutes, add shrimp back to pan with sauce, along with snap peas.⠀⠀⠀⠀⠀⠀⠀⠀⠀
6. stir in cooked rice noodles until evenly coated with sauce. top with chopped cilantro and serve immediately. enjoy!⠀⠀⠀⠀⠀⠀⠀⠀⠀

I’ve been experimenting with @entomofarms crickets and cricket powder to see how obedient i can make them to my cooking whim. this post focuses on the top left dish where i sautéed the crickets along with red onions, red and green chili peppers, habaneros, and garlic.
i cooked the crickets for a tad too long, and they had a residual taste like toast when it is a shade too dark. so now i know for the next time, to cook the aromatics down some more before adding dried crickets (i’ve done this with frozen crickets beautifully). live and learn for another day.

Not going to lie, these chocolate nut-free granola bars may just be the best granola bar i’ve ever had. like wayyy better than store-bought. they’re chewy yet crunchy and made with wholesome ingredients like @sunbutter’s natural sunflower butter (#ad) which gives them the peanut butter texture without the nuts! i also like to classify them as the perfect snack

oatmeal apricot breakfast bars with homemade apricot jam 😍
these may be breakfast bars, but are delicious enough for dessert! they are great with ice cream or just the way they are. give yourself some love in the morning with these delicious bars of heaven😍🥳
½ c butter, softened to room temperature
1¼ c rolled oats
¾ c oat flour
½ c coconut sugar sugar
1/2 tsp. baking soda
1 tsp baking powder 1 c apricot jam (eq 6 medium apricots)
preheat the oven to 350 degrees. layer a baking dish with parchment paper and grease it with coconut oil.
in a mixing bowl, combine the softened butter, coconut sugar, baking soda, oats and oat flour using a fork, finish combining with our hands.
measure out 2 cups of the oat mixture and gently press into the bottom of the baking dish.
spread the apricot jam over the crust stopping about ¼" from the crust edge.
sprinkle the remaining crumble topping over the top of the apricot jam. bake for 30-35 minutes. let cool, cut into bars, and enjoy!
*homemade apricot jam:
add apricots to a medium sauce pan wit 1 tbsp water and 2 tbsp maple syrup. mash up with a fork or whisker and bring to boil. lower the heat and let it sauté for 10 minutes. pour the mixture into the blender and blend for 30 seconds. it’s so fresh and delicious!
Check out this curried cod rice bowl made with filets from @wildalaskancompany ! here’s the recipe:
heat 2t butter in a large saucepan over medium heat. add 1 thinly sliced small shallot, cook for 2 minutes, then stir in 2 finely chopped garlic cloves. cook until softened (about 2 minutes more). stir in 2 teaspoons curry powder, and cook until fragrant (about 1 minute). stir in 3/4 cup rinsed and drained basmati rice, stirring to coat. add 1 1/4 cups water, bring mixture to a simmer, reduce heat to low, cover and cook for 10 minutes.
meanwhile, season two 6 oz cod filets with a salt and a sprinkling of curry powder. after the rice has been cooking for 10 minutes, give it a stir and lay the cod filets on top of the rice. cover and continue to cook until the filets are cooked through (about 8 to 10 minutes more).
to serve, season to taste with salt, then divide cod and rice between 2 bowls. top bowls with jammy eggs, labneh (or greek yogurt), sliced celery (1 stalk for 2 bowls), and cilantro leaves. finish with a squeeze of fresh lime.

scamorza is the cheese of cheeses, the supreme cheese if you will (well imo).
if you’re not familiar with it, it is a sicilian cheese, a strangled mozzarella ... sounds so friendly lol. i’ve only ever had it at @fiammacentro and they prepare it by baking it in a cast iron skillet in their wood fire stove, topped with fire roasted peppers, sun dried tomato pepper sauce, and black olives! it is stretchy, flavorful and the perfect topping to italian toast👌🏼
my girlfriends and i always order 2 for the table because we know one will never be enough! it’s everyone’s favorite🤤🤤
scamorza is no longer on their dinner menu, but we ask for it every time and sometimes, when we’re lucky, we’re able to get a order of it (i highly encourage you to do the same😉).
this week though, it’s a special so if you haven’t had scamorza before, get there while it’s available, i promise you it’s pretty much a delicacy👌🏼

New york cheesecake summer version! it is rich and creamy but has a refreshing taste😊 just melts in your mouth‼︎ passion fruit sauce is one of the options, but it is phenomenal and highly recommended〜🥰recipe👇🏼

home made bagel guilty-free😘
the recipe is below👇🏼
300g bread flour・2tsp instant dry yeast ・20g sugar・1/2tsp salt ・180cc warm (about 40°c) water ・80cc honey 🍯 or ※homemade pancake syrup
1.in the bowl combine flour, yeast, sugar , salt. add water and mix to until everything is cohesive and coarse, then place on the worksurface.
2.knead the dough well for 10minutes. then shape 5 balls and put them cover with a food wrap and let stand at room temperature for 5minutes.
3. make a bagel shape (see story, high light photo!)cut the parchment slightly larger than the bagels and place each bagel on it.
4. boil water and honey 🍯 or ※homemade pancake syrup in a pot. drop one or two bagels into the water and cook for 1 minute on each side. put cheese or sesame on top if you like.
7. bake in a 200°c oven for 13minutes.
i use homemade pancake syrup because it is a waste to disposable a lot of honey at home.
※ home-made pancake syrup 🥞
150g sugar ・150cc boiling water
put sugar and 1tbsp water in a pan and heat it. when it turns brown, add hot water and boil until smooth .you can use caramel pudding 🍮, pound cake, and many others.
