My eldest sil called us this morning to let us know she made a brand new batch of jeow b**g (sweet, spicy and savory laotian chili sauce). she set aside a batch for us to pick-up after work today. i was like, “nope. we are heading over for ours on the way into work!” my in-law’s are the best!
for an afternoon snack, i made some khao gee (laotian sticky rice egg patties) to accompany my sil’s bombdotcom sauce. khao gee with a side of homemade jeow b**g is truly part of my childhood on a plate. instant nostalgia!
i love how versatile bamboo is. great in all forms of cooking. awesome for building things. and just beautiful in nature. what are some of your favorite ways to consume bamboo? i love it in chili oil. i love it steamed and dipped in pepper sauce. i love it all 😋
Tuesday thai. woked chicken with chilli, garlic, oyster sauce, thai basil, green beans, spring onion and a splash of salty fish sauce. served on rice with a crispy fried egg on top.

ingredients: (serves 2)
🥢150g ribbon noodles (i got mine from aldi)
🥢2 small carrots shredded
🥢1 egg beaten
🥢1 small red onion
🥢120g bean sprouts
🥢handful of coriander 🥢1 spring onion to garnish
🥢handful of peanuts
🥢1 tbsp fish sauce
🥢2 tbsp brown sugar 🥢3 tbsp chicken stock
🥢1 tbsp white wine vinegar
🥢1 tbsp soy sauce 🥢1 tsp chilli oil
1. toast some peanuts in pan over medium heat then crush
2. soak uncooked noodles in cold water
3. shred carrots, chop onions into thin slices
4. mix ingredients for sauce
5. stir fry veggies over medium high heat for 3-4 mins then set aside
6. drain noodles and add to pan, stir fry until loose then toss in the sauce
7. add the egg on one side of the pan and let sit for 30 secs before tossing with noodles
8. add veggies back in pan with noodles, garnish with spring onions, coriander and peanuts.
