We love easy, cheesy dips like this original obatzda recipe! made with ripe camembert, cream cheese, butter, onions, spices and beer, this creamy cheese dip is perfect for your next game day party. serve with soft pretzels and enjoy!
8 3/4 oz camembert cheese
1/3cup or butter
5 1/3oz cream cheese, at room temperature.
4 1/4oz, minced, plus extra sliced in rings to serve
1/4teaspoon ground cumin
1 pinch salt and pepper
7 tablespoons weißbier (wheat beer)
cut the camembert into small pieces with a sharp knife. this is easier when the camembert is still chilled.
put it in a large mixing bowl and leave to come to room temperature.
add butter, cream cheese, chopped onions, paprika, cumin, salt and pepper.
use your clean hands to thoroughly mix the ingredients together until you have a homogeneous paste.
add in the beer and mix again until all the beer is incorporated, using your hands or a wooden spoon.
cover the bowl with some cling film and refrigerate several hours or even a day or two to give the flavors time to combine.
serve the obatzda with brown bread or pretzels, slices of raw onion and beer.

To me, nothing says summer like "pesto." my basil plants were getting a little out of control, so last night i made a batch of pesto. i used my favorite regular recipe, with a few exciting changes. i had read somewhere recently about how adding some lemon juice to pesto helps it keep it's color better. i decided to try it! another change i made was because i ran out of pine nuts. i usually use just pine nuts, but this time i added a few almonds and walnuts too. i also added a pinch of sugar and a drizzle of white balsamic vinegar, just to help balance out the flavors.
the pesto turned out the best i've ever had! this will be the only recipe i make in the future.
i made extra pesto so i could tuck some away in the freezer (more on that later). how do you eat pesto?
