Another simple lunch bowl this week. the bottom is based with rice and i topped it with corn, black beans (soaked overnight + cooked myself), broccoli infused with my mexican spice blend, baked oil-free mexican sweet potatoes and a little sprinkle of black sesame seeds for calcium 🍠🥦

once again sharing my recipe for these precious nuggets: *1 can of chickpeas, drained and rinsed very well
*1/3 cup fine oats
*5 dates (or more if you have an extra sweet tooth)
*1 tbsp peanut butter *a few tbsps of liquid (water or non-dairy milk) to help blend *optional add-ins: vanilla, coconut flakes or flavored protein powder -— in a blender or food processor, combine all of the ingredients above and blend until super smooth. then fold in some chocolate chips or cacao nibs and roll into balls or eat straight out of a bowl 😍
no risks of contamination either because there aren’t any raw eggs involved! ❤️ #gottaloveplants
To eat or not to eat... breakfast! 🧐🥑💀
by now you’ve probably heard about intermittent fasting; all the cool kids are doing it, and the fitness & health community is still shaking from the after quake.
i’ve tried it, and, well... let’s just say, i’m not a cool kid 😎
although i like the idea per se, and i’m sure it’s great for some, for me, it mostly meant starting the day off grumpy...
...annd progress to even grumpier throughout 🙄🤦🏼♀️
on top of that, after breaking the fast, i’d feel bottomless. i’d be like a vacuum in the kitchen; inhaling a cookie there, and half a loaf of bread there!
so, the point 👉🏼 i n e e d my breakkie.
preferably, one jam packed with fibre, some good fats and protein, and at least one serving of fruit. what to say, i’m a gal that likes big breakfasts! 🤷🏼♀️
for me, starting the day off with a good breakfast keeps me level. i don’t get as many cravings, my focus is better, and i have overall more energy.
health isn’t a one size fits all though - don’t be afraid to experiment with it to learn more about yourself and your body, what works for you and what doesn’t! maybe you’re a sandwich-person🥪, maybe smoothies on the go is your thing🍹, maybe oats is a morning staple(🙋🏼♀️) - or perhaps eating breakfast just isn’t your jam? there’s no right or wrong, experiment until you find what works for you, and do what feels good!

This breakfast from a few days ago was amazing, but the food at this ytt is seriously unreal. my first real meal in 36 hours was pinto bean and avocado tacos, quinoa, and salad with mango pineapple salsa🍍dinner post meditation was brown rice and a tofu stir fry with a whole bunch of greens🥡🌿 you can tell the food is made with pure love and created from a place of mindfulness. i’m still in such disbelief that this is my reality right now. diving into the crystal blue ocean waves at sunset and a much needed shower outside with palm trees peeking overhead and a lil gecko friend was the perfect way to end day one🦎this life is beautiful.

don’t get me wrong, i thrive in the summertime and the 🌞 gives me life, but the new yorker in me loves all things fall: pumpkins, apples, cinnamon, pies, oh my!
but just because summer’s almost over doesn’t mean you can’t still indulge in an açaí bowl! 😋

how to get thick smoothies...
-use either a food processor or powerful blender such as @vitamix or i use a montel blender.
-use less liquid, and be patient!! it helps to have a wand to push the ingredients down into the blade. - use frozen fruit. avocados🥑, mango, and banana🍌 will give you the best consistency!! •

i ditched being “busy” this summer and instead became highly focused on my goals, checked my notifications less, paid less attention to what others do and paid real attention to what i needed to do to grow in my personal and professional life!
i stopped checking my emails during my productive hours, kept my my phone on airplane mode at nights and wrote about the reality i wanted to create for my life every sunday morning in my journal!
it’s been a good summer! i kept it real! cried both out of joy and fear on my long walks, screamed and danced like a child every time i achieved one of my goals and learned a lot about what it means to unapologetically pursue my own path!
ready for a new season and a new a chapter! bring it on fall🍂🍁
lunch was this pita bread thing with loads of veggies in it! perfect for school too;)
i spread hummus on one of the inside of the pita and guacamole on the other, added arugula, salad, tomatoes, carrots, red beans, apple cabbage, chickpeas, yellow pepper, kale, avocado, seeds and nuts. that’s it!
