Today and tomorrow are just working days for me. so when i get back from being in the bookstore all day i don’t really have time to make a dinner that’s too complicated. last night, however, i had this delicious salad. also super quick and easy with all the healthy ingredients you need. what’s your favorite salad recipe? •

One of my go-to, cheap and easy meals to make in university (aside from boxes upon boxes of kd) was mr. noodles. at a measly 39 cents, this girl would stock up and save her $$ for better things— like binge drinking on the weekends 😜! fast forward and i still enjoy it, but with a healthier twist. on rainy days like today, i just cook the noodles, toss the seasoning (bye sodium✋🏼) and lightly fry it up with whatever veggies i have on hand; water chestnuts and mushrooms are a must for me! i also added in some left over marinated tofu and a vegan thai peanut sauce that made this extra special. i always assumed that cooking primarily plant based would be super limiting and somehow complicated, yet the myriad of ingredients i have yet to discover are proving to be endless and i’m still able to enjoy the meals i loved! 💕🌱🌎
