Southwest style quinoa bowl w/ cashew chipotle cream
cooked quinoa (1 cup)
black beans (1 cup)
sweet corn (1 cup)
chickpeas (1 cup)
bell peppers (green,orange,red)
green leaf lettuce
1 tsp chili powder
1 tsp cumin
1/8 tsp cayenne powder
1/2 tsp garlic powder
1/2 tsp onion powder .
for the chipotle cashew cream we got the recipe from @carrotsandflowers
and it’s sooo goood! i recommend you to go check it out on her blog! 😋
we used @citassalsa local salsa for the cream also 👌🏼🌶
start with rinsing your quinoa. next throw into a small heated sauce pan and toast till smells a little nutty then add 1 1/3 cup water or veggie broth. bring to boil & simmer about 15 min. .
dice up your vegetables and set aside in separate bowls. .
in small sauce pan throw in black beans, garlic powder, onion powder & chili powder, healthy pinch of salt, mix and heat
in a medium skillet sauté chickpeas on medium heat for 4-5 min. next throw in sweet corn, cumin, cayenne & healthy pinch of black pepper, stir and heat through about 2 min. remove from heat and add juice from half a lime. thanks @therawboy for inspiring this chickpea/corn mix) .
last but not least in another skillet sauté your bell peppers till desired tenderness.
chop some greens (we used green leaf lettuce) & herbs (cilantro goes great) .
layer your bowl. top with cashew chipotle cream. .
side note: you can make this bowl raw if you prefer.
also side note: remember you can make this however you want. this is just simply a way to give you some ideas or inspiration to make your own custom bowl. switch out some veggies for others or try different toppings and seasonings the limit is endless. be creative 😊
Finally making lu rou fan (taiwanese braised pork rice bowl) after a very long time. but not your ordinary lu rou fan, this is the vegan version. using dried small size proteina as the “pork belly” and the regular lu rou fan seasoning (dark soy sauce, light soy sauce, sweetened soy sauce, coconut sugar, five spice powder and fried shallots). i should use rock sugar tho, but i think mine lost somewhere so i use coconut sugar instead, and for extra kick (indonesian, i need things spicy 🌶) i add few bird eye chili while braising. and serving this with barley (you can always use rice, but am into barley lately) and greens (i have baby g*i lan) #veganfood#easyveganmeals#yummy#yumyum#yum#goodfood#cleaneating#nomsg#homemadecooking#eatmoreplants#plantbased#proteina#veganfriendly#nomeateveryday
