Mexican inspired sweet potato trio by @cookingforpeanuts 🍠 which one would you enjoy first? ​
recipe: beans: cook 1 chopped onion (small dice) in a little vegetable broth or sauté in olive oil until translucent, about 7 minutes. add 3 minced garlic cloves and cook another minute. mix in 1 tbsp tomato paste. add 3 cups cooked black beans, 1 tbsp vegan worcestershire sauce, 1 tbsp dijon mustard, 1 tsp maple syrup and 1 tsp sriracha. add desired amount of vegetable broth or bean liquid and simmer about 10 minutes, adding more liquid as needed. salt and black pepper to taste. ​
​sweet potatoes: p***k sweet potatoes evenly over surface with fork. bake on lined sheet at 400f until thickest part of potato is easily pierced with fork. once cool, slice open with a knife.

​corn: remove husk and silk. either use tongs to hold end of corn and turn slowly over gas flame on stove until evenly charred, or roast on oven rack at 400f. allow to cool before removing kernels with a sharp knife. (optional: reheat kernels in saucepan with a little melted vegan butter.) toss with fresh lime juice, cilantro, chili powder and salt to taste.recipe easy guacamole: mix together 3 very ripe avocados (mashed), juice 1 lime, 2 finely grated garlic cloves, salt to taste.

Super simple summer mocktails 3 ways:

these delicious drinks are refreshing, super simple and of course alcohol free, but you could add a dash of b***e if you’re in the mood to spice things up. each recipe makes 1 drink.

mojito mocktail 🍹

ingredients:

1/2 lime (quartered into 4 wedges)
2 tsp organic sugar
10 mint leaves
ice cubes
soda water

method:

1. place the lime wedges and sugar in a serving glass and muddle until the juices have released from limes.
2. take 8 mint leaves, clap them in your hands to release their aroma, then run them around the rim of the glass. place the mint leaves in the glass and muddle gently.
3. fill the glass with ice cubes and top with soda water.
4. stir the mocktail gently and decorate with 2 mint leaves.

sex on the beach mocktail 🍹

ingredients:

1 ripe peach
ice cubes
cranberry juice
orange juice
glace cherry (suitable for vegans)

method:

1. place the peach in hot water for a few minutes to soften the skin, then peel.
2. cut the peach in half, remove the stone and place the flesh in a blender with a generous splash of water. blend until smooth to make peach the puree.
3. fill a glass with ice then pour in the peach puree.
4. top with half cranberry juice and half orange juice, and decorate with a maraschino cherry and a slice of orange.

blackberry bramble mocktail 🍹

ingredients:

1/4 cup blackberries (plus one extra for garnish)
juice from 1/2 lemon (plus the peel for garnish)
1 tsp agave syrup
ice cubes
ginger beer
soda water

method:

1. pour the blackberries, juice juice from the lemon and agave syrup in a glass and muddle until the blackberries have broken down.
2. fill glass with ice and top with half ginger beer, half soda water.
3. decorate with a blackberry and lemon peel.

These delicious burritos are filled with mexican style brown rice, black beans, soyrizzo, lettuce, sweet mini peppers, tomatoes, onion, cilantro, pineapple salsa, cashew queso and of course lots of guacamole (and it’s not extra at my house 😉😁) so good!

easy mexican style rice:
1 cup quick cook brown rice (rinsed)
1.5 cups water
1 can tomatoes with green chilis
1 tsp garlic and onion powder
1 tsp paprika
1/2 tsp cumin
salt and pepper to taste
bring everything to a boil in a small pot, cover with a lid and let simmer on very low heat for 15-20 minutes.
turn off the heat, let sit for another 5 minutes, fluff up with a fork and enjoy 😋
if you don’t have quick cook brown rice, adjust time according to package instructions!

ingredients
for the crust (9”tart pan)
1 1/2 cup gluten free flour @bobsredmill
1/2 cup raw cane sugar
2 tbsp cocoa powder
110 gram cold coconut spread
1/4 tsp pink himalayan salt
1 tsp pure vanilla extract •

for the chocolate pudding filling
2 avocados .
2 1/2 cup hazelnut milk
1/4 cup raw cane sugar
1 tbsp cornstarch
1 tsp agar agar powder
.
1/2 tsp instant coffee powder (optional)
6 tbsp cocoa powder
pinch of salt

to make the crust
add all ingredients in a food processor, pulse to combined,until you get a wet sand texture. (do not over mix)
once ready, press mixture firmly to the tart pan, then chill in the fridge for 15 minutes before baking.
pierce the bottom of the tart with a fork. bake at 175 degrees celsius oven for 15-20 minutes. let it cool while you prepare the filling.
to make the filling
heat hazelnut milk in a small saucepan over low heat, add in sugar, agar agar powder and cornstarch. make sure to stir the mixture constantly.
let mixture simmer for about 7-8 minutes or until agar agar and sugar has completely dissolved and the mixture has become slightly thickened.

meantime, place avocados in a blender, blend until smooth.
once the milk mixture is ready, slowly pour
it into the blender with avocado purée, alternate with cocoa powder (do it in 2-3 batches), blend well.
then add in coffee powder and salt to mix well.
pour pudding mixture over cooled tart shell. chill in the fridge for couple of hours before serving. enjoy with fresh fruits!

pentru că îmi place să beau smoothie-ul rece și cremos am ales să folosesc un mix de fructe de pădure congelate de la @tescofood . punga include căpșuni, zmeură și mure.am pus cam cât încape intr-o palmă și anume 2 la număr. mai apoi am folosit o banană nu foarte mare, lapte de cocos cam 100-150 ml, 2 linguri de iaurt cu cireșe de la @activia_uk și in final miere de albine care este opțional.

because i like to drink cold and creamy smoothie i chose to use a frozen mix of berrys from @tescofood , the bag contains :raspberry, blackberry, strawberry and i put as much as it fit in a palm namely 2 in number.and then i user a banana but not very large, coconut milk 100-150 ml , and 2 tablespoons yogurt with cherries from @activia_uk and finally honey bees which is optional because the yogurt is sweet.

I have explained everything in the past but so many people ask me how i did it so i think ill do it again. my name is madison, im 5'10 and ive lost 70 pounds. i went from 205 pounds to 135, and here is how i did it. i started out purely with keto. which is a high f*t low carb diet and around 1200 calories a day. without working out and just doing keto i lost 50 pounds. but i didn't feel strong. i got a personal trainer and began working out every other day for an hour, 30 minutes of cardio, 30 minutes of weights. this is still my routine. from this i lost fat, and got a lower body f*t %. but while work in out i had to add in more protein and reduce f*t for it to be more safe. my new food routine is 50-100g of protein, 1300-1500 calories a day, 30-60carbs, and 10-30sugars, and i try to keep f*t as low as possible 20-60. ♥♥♥ hope this helps, feel free to ask anything below.

* 1/2 cup (125ml) gluten free rolled oats
* 1/2 cup (125ml) quinoa puffs
* 1/3 cup (80ml) almonds, chopped
* 1/3 cup (80ml) hazelnuts, chopped
* 1/4 cup (60ml) pumpkin seeds, chopped
* 1/4 cup (60ml) flax meal
* 1 tbsp chia seeds
* 1/3 cup (80ml) maple syrup
* 1 tbsp coconut oil, melted
* pinch of sea salt
preheat oven to 180°c (350°f). line a 20x20cm (8x8 inch) baking pan with parchment paper. combine all dry ingredients in a large bowl. in a small bowl, whisk maple syrup and coconut oil. pour liquid over dry ingredients and stir until completely coated. transfer the mixture in the prepared pan and press down firmly. bake for 25 minutes or until golden brown. let it cool slightly before spreading the chocolate.
topping
* 180g dark chocolate
* 1 tbsp coconut oil
* 1 tbsp goji berries
* 1 tbsp pistachios, chopped
* 1 tbsp pumpkin seeds
* 1 tbsp cocoa nibs
* pinch of sea salt
melt chocolate and coconut oil in a double boiler. spread evenly over the base. sprinkle all toppings. refrigerate for 1 hour before cutting into bars. enjoy for breakfast or snack 😋

• ingredients:
1 seeds of large #pomegranate 2 large roma #tomatoes seeded and chopped
1 small red #onion diced
2 seeded jalapeños, finely diced

Homemade mango chia seeds pudding.
this sweet, tangy, light and refreshing dessert is perfect for summers! it is sweetened with honey and therefore no added sugar too. a must try one in this mango season.
