1/2 tablespoons olive oil or vegan butter 16 ounces/454g/5 1/2 cups mushrooms, sliced (including mushroom stems) 8 cloves garlic, minced 1/2 large onion (about 3/4 cup), finely diced 1 teaspoon sea salt & 1/2 teaspoon ground black pepper 3 cups high quality vegetable broth 1 13.5/383 can coconut milk (about 1 1/2 cups) 4 sprigs thyme, stems removed
in a large, deep p*t over medium high heat, add the olive oil or vegan butter to heat. add the mushrooms, garlic, onion and salt and pepper. stir together and sauté until mushrooms begin to release their natural juices and become fragrant, about 8 minutes. pour in the vegetable broth and the coconut milk. add in the thyme. stir together and bring to a boil, then a simmer for 15 minutes. scoop out two cups of soup (with some mushrooms) and pour into your blender. if you have a glass blender, ensure it cools down a bit first! press the soup setting or blend until fully blended out. pour back into soup p*t and blend one more time. serve the soup and top with your favourite toppings and enjoy! share with a friend who would love this!

1 onion diced 2-3 cloves of garlic, minced 1 tbsp vegetable oil 11 oz mushrooms, sliced (300 g) 4 tbsp white wine (optional) 1 tbsp tamari or soy sauce 3/4 cup vegetable broth or water (180 ml) 3/4 cup plant-based milk or cream (180 ml) 2 tbsp cornstarch spice mixture: 1 tsp onion powder, 1/2 tsp garlic powder, 1/2 tsp smoked paprika, a pinch of chili flakes, sea salt & pepper to taste 1 tbsp nutritional yeast flakes (optional) fresh thyme leaves and/or parsley (and/or tarragon), chopped serve with brown rice or pasta of choice instructions heat oil in a large pan/skillet, add onion and fry for about 5 minutes. add garlic and fry for a further 1 minute. now add the mushrooms and fry over medium heat for about 5 mins. pour in white wine (optional), vegetable broth, tamari (or soy sauce), and the spice mixture. add nutritional yeast flakes as well but that's optional! bring to a boil. add cornstarch to the plant-based milk or cream (ela used canned coconut milk, however, almond milk, oat milk/cream or soy milk/cream is fine too) and stir to dissolve. pour the milk/cream mixture into the pan and cook on low-medium heat for about 10 minutes until the sauce thickens. taste and adjust seasonings as to your preference. add fresh thyme leaves and/or parsley and/or tarragon to taste! enjoy with brown rice or pasta of choice! share with a friend who would love this! .

Un c’est bien, deux c’est encore mieux! tête à tête avec mon grand ado de bientôt 15 ans ce week-end! c’est d’ailleurs un de mes meilleurs clients! :-) pour deux portions : 1 tasse de bananes congelées (coupées en petits morceaux, ton blender te remerciera!), 1 tasse de mangues congelées de @naturestouch_frozenfruit , lait d’avoine de @earthsowncanada (juste assez pour faire tourner les lames) + 1 cuillère à thé de poudre de pitaya de @zyotea . à mon goût, les fruits sont assez sucrés, mais on pourrait ajouter un soupçon de sirop d’érable au goût!

pour les garnitures : fruits, éclats de cacao de @pranasnacks et granola aux supergrains de @gogoquinoa . on en a chacun ajouté pas mal plus après la photo, genre une montagne! :-)

My posts have been a little inconsistent, and that’s mainly because my meals haven’t been all that interesting lately. it’s such a busy time of year, most nights my dinner consists of a smoothie jammed with all the veges i planned to eat that night. it’s just so much easier! i won’t lie and say i’ve been 100% loyal to my “plant based” life style, because last week was my birthday week and so (hello rack of ribs) πŸ˜‚ and then in the weekend we celebrated the brother in-laws big 30th (hello hangi) haha. but i will say, 99.9% of the past few weeks i have been on my best behaviour, in terms of eating “plant based”, and as someone who has spent their entire life eating copious amounts of meat every day, i am very proud of myself, and my body is certainly proud and thanking me too!
