I started making miyoko's almond feta cheese about a week ago. 💜💙🌱 today i finally have something that looks like cheese!😃 i plan to let it keep in the fridge for another week and make spanakopida with them on saturday for a friends get together!🙄 here's my process: first, i soaked blanched almonds in water for 24 hours. then drained the water and rinsed them. blended the soaked almonds with sauerkraut juice. sealed the blended mixture and let it culture for a few days until it tastes tangy. (i cultured it for 4 days). then i mixed agar agar powder and water in a sauce pan on a low heat for 2 minutes. added in the cultured almond mixture and mixed well. poured mixture onto a cheese cloth over a large container, refrigerated for a few hours. took the cheese out from the fridge , cut it into 4 pieces then let it soaked in the brine in room temperature for 8 hours. after that keep it in the fridge for up to 3 to 4 weeks! im only gonna keep it in the fridge for a week, so i hope it will be ready enough.
