I have been so down on myself for several weeks now. i have finally gotten back to pre-vacation weight... but i lost my momentum well before vacation. i have not gotten back into a good exercise routine, i’ve still eaten too much junk, and my attitude has been at eeyore status for quite some time. so, when these photos of me in the red from 2 years ago came up today, i realized i don’t look like that any more. i look in the mirror every day and i feel huge and i feel like i’ve made zero progress. we all tell ourselves that lie, don’t we? i’m posting this as a reminder that i’m not where i was and it’s time to get๐Ÿ‘ my ๐Ÿ‘ b**t ๐Ÿ‘ back๐Ÿ‘ in ๐Ÿ‘ gear! ๐Ÿ˜ฉ •

good morning! it's day 1 of our #cheap and #cheerful week on #howdoigovegan, and this is what's for #breakfast: a #banoffee #oat sundae. and for 54c per serving and about ten minutes' work, you really can't go wrong!
ingredients:
1 cup oats
2 bananas (1 mashed, 1 sliced)
10 #dates a pinch of salt and a splash of #vanilla essence, if available
#peanut butter and flaked #almonds to serve

directions:
1. soak the oats in enough water (or use all-plant milk if you prefer) to just cover them. add 1/2 of the mashed banana and stir.
2. place the dates in a blender with salt, vanilla essence, and enough hot water to blend to a smooth consistency. if you don't have a blender, chopped dates will work perfectly well!
3. layer the oats, sliced bananas, date caramel, and mashed banana into a glass, alternating. top with a few dots of peanut butter, and sprinkle with flaked almonds.

This morning i was craving a smoothie bowl! ๐Ÿ“
i went in search of a grain/granola mix and was shocked. in almost every single granola mix i looked at the second ingredient was sugar or golden syrup! and they’re all advertised as ‘whole food’ or ‘whole grain’. took me ages to find one where the mix was 100% grains and oats.
ingredients:
- black chia seeds
- rolled oats, barley, rye, triticale, brown rice
- berry smoothie (blackberry, strawberry, blueberry, raspberry)
- banana
- cacao nibs
- kiwi fruit

I make these vietnamese rice noodle bowls when i'm feeling the need for something fresh and have a little time to marinate the tofu. can't beat all the micronutrients, though, and these are really delicious. chop up some lettuce, cucumbers, carrots, fresh herbs (cilantro and basil are my favorites), and assemble in a bowl with cooked rice stick noodles and baked tofu (marinated in garlic-ginger-chili-soy sauce-water mix, baked at 400 degrees for 15 minutes, stirring occasionally). 272 calories each at 4.4f/44c/14p. cost was $0.50 (1/2 head of lettuce) + $1.00 (<1/2 lb rice sticks) + $2.19 (1 block firm tofu) + $0.50 (1/2 bunch cilantro + $0.50 (1/2 cucumber) + $0.30 (few baby carrots) + $1.00 (rice vinegar, soy sauce, garlic cloves for dressing) = $6/4 servings = $1.50 each for tons of veggies and a great dose of plant-based protein ๐Ÿฅ—. #budgetmeals #medstudentlife #plantbasednutrition #easymealprep #ifitfitsyourmacros #plantbased #plantbasedmeals #veganrecipes #veganfood #veganfoodporn #wholefoods #wholefoodsdiet #wholefoodsplantbased #wfpb #wfpbno #mealprep #noodles #veganmealinspo
