Avocado egg salad!! this was a first for me and i loved every single bite so much i was using the chips to scrap every last bit of egg salad out of the avocado ๐Ÿคค

this recipe was super quick and easy!
here’s what you’ll need what you need:
1 avocado
3 hard boiled eggs
1/2 tbsp avocado oil mayo (optional)
a pinch of sea salt for taste
dill weed

first blend up 1 avocado in the food processor till it’s creamy, (you can leave it chunky if that’s a consistency you prefer) then cut up the hard boiled eggs into tiny pieces, after this mix the eggs and avocado together, then mix in the 1/2 tbsp of avocado oil mayo, a pinch sea salt and dill. (the mayo can be omitted but i personally think it tasted better with the addition of the mayo.) ____
i added my egg salad back into the avocado shells for presentation ๐Ÿ’๐Ÿป‍โ™€๏ธ. i used ritz “crisp and thin” for scooping. ๐Ÿ˜

my friends @epstiensmeat convinced me to buy their new pastrami rub ribs they are selling now for chag. i decided i really want them soft and falling off the bone and done quickly... so in cake the instant pot. let me say... brilliant move on my part. •
now personally i have a strong dislike for pastrami spice... i find it very strong. sometimes too strong. but i do love the flavor of pastrami. after rinsing the spice off before i cooked it and adding a dijon coconut sugar mixture to cook it in to..
i hit on the perfect combo of super tangy, with a slight sweet note on melt in your mouth ribs.
for the ribs
5-6 lb pastrami ribs, slightly rinsed off
1 cup water
1/2 cup dijon mustard
1/2 cup coconut sugar
mix the mustard and sugar together and slather over the ribs.
add the water to instant p*t and then add the ribs.
put on the pressure cooker setting for 60 minutes.

Trying to prep everything….
i use to prep it all…breakfast, lunch, dinner and snacks every sunday. all for a whole week. that got old fast and it took me forever. plus, i found out that food made on sunday grosses me out on thursday. now i do more meal planning. i make sure i have a few lunch and snack options (i use leftovers a lot of lunches), a few different breakfast options and prep what i can for dinner without actually prepping the whole meal. for example, i’ll prepare the protein i need for a dish or i’ll cut up and roast sweet potatoes and just use those and some leftover chicken for lunch the next day.
making too many new recipes….
this is something i use to do all. the. time. i would look up all the meal prepping recipes on pinterest and would make about 5 new recipes and would actually only like about 2 of them. which left me not wanting to eat a meal i wasn’t happy with or tossing it out and grabbing somethings else, and by something else i mean taco bell. i was basically defeating the whole purpose of meal prepping. now i stick with what i know i like and try one new recipe a week.
not checking the fridge before i shop….
this seems to be common sense but i have committed this error one too many times. every time i made a plan for a meal prep and started my list, i would start from scratch instead of basing my meals off of what i already had in my fridge to use up. this mistake was costing me a lot of money.
not cleaning up as i went….
there is nothing worse than spending 4 hours meal prepping and then having to clean up a huge mess later. this made me feel like i was in the kitchen all day and made the task so tedious. i now fill my sink up with soapy water and will clean up as i go and wash anything i just used.
