Pasta with butternut squash sauce by @walderwellness 🧑 . . to make: blend 1 cup raw cashews, 1/2 cup water, 1 can puréed butternut squash (so much faster than roasting!), 1/2 cup nutritional yeast, garlic, thyme, salt + a sprinkle of cinnamon in a high-speed blender (adjust spices to taste). add to cooked pasta, and top with extra veggies if desired (i added broccoli). use leftover sauce for dips + such. #bestofvegan

Handmade shiitake sausages by @aboutthatfood πŸ’š . recipe as posted on aboutthatfood.com: . makes 8 sausages. ingredients: •220g of shiitake mushrooms •1/2 can of chickpeas •1 white onion •3 cloves of garlic •3 tbsp of tomato puree •2 tbsp of miso •1 tbsp + 1 tsp of liquid smoke •1 1/2 tsp of hot paprika •3/4 of a tsp of cayenne pepper •2 tbsp of tamari •2 tbsp of sesame oil •2 tbsp of estragon mustard •2 tbsp of copped basil, can be dried •3 tbsp of chopped chives, can be dried •2 tbsp of agave nectar •3/4 cup of veggie stock •2 1/2 cups of wheat gluten method: 1place all of the ingredients, except for the wheat gluten, into your food processor and blend until smooth. 2place 2 cups of the wheat gluten into a bowl and mix together by hand with the paste of the remaining ingredients. 3place on a clean surface dusted with wheat gluten and start kneading, work in as much of the remaining wheat gluten until you get a doughy consistency. 4now divide the dough into 8 parts and roll each part into a sausage. wrap each sausage into a sheet of aluminum foil, twist the end tightly and make sure none of the dough can pour out while cooking. 5bring a large p*t of water to a simmer, make sure the water never starts to boil. 6place the foil wrapped sausages into the water and simmer for 1 hour. 7after one hour remove the sausages, let them cool for a little and then unwrap. 8slightly brush them with oil and place on the grill for a few minutes. #bestofvegan

β“₯ zucchini boats πŸ₯’ i prepared this dish for one of the meal kits today and thought i’d share the recipe! πŸ‘©πŸΌ‍🍳 it’s pretty simple and turns out super tasty!! ingredients 2 zucchini 1-2 cups black beans 1 tomato 1 jalapeño (deseeded) 2-3 green onions @daiyafoods shredded cheddar cheese cumin crushed red pepper parsley flakes directions 1. slice zucchini in half vertically and scoop out insides with a spoon. leave zucchini about 1/4 in thick all around. 2. drain black beans and dice onions * tomatoes 3. pre-heat oven 350*f and line a baking sheet with foil (spray with nonstick cooking oil) and line zucchini on baking sheet 4. add beans, onions, tomato, jalapeño, and spices to a large bowl - combine well 5. divide mixture evenly amongst the zucchini filling them with as much of the mixture as fits 6. top with @daiyafoods cheese and bake for 15-25 minutes + enjoy πŸ™ŒπŸΌ #vegan #veganrecipe #veganfood #veganfoodshare #veganmeal #veganeats #plantbased #plantbaseddiet #vegano #zucchiniboats #healthy #healthyliving #veganlifestyle #recipe #dinner #zucchini #whatveganseat #crueltyfree #crueltyfreefood #saradeesrecipes

Actually put a little effort into cooking dinner tonight πŸ‘½ haven't posted because i haven't been cooking quite frankly πŸ˜ͺ i've been depressed and eating take out mostly ☠️ this was really good and worth the effort πŸ’ͺ glazed baked tempeh triangles (got the idea from @minimalistbaker ) with stir fry veggies and rice 🌱🍚 the sauce for the tempeh was so delicious i kind of want to put it on everything forever: tamari, maple syrup, lemon juice, chili flakes, sesame oil, peanut butter πŸ’« very yum and always vegan πŸ’š
