Pasta with butternut squash sauce by @walderwellness 🧡 .
to make: blend 1 cup raw cashews, 1/2 cup water, 1 can puréed butternut squash (so much faster than roasting!), 1/2 cup nutritional yeast, garlic, thyme, salt + a sprinkle of cinnamon in a high-speed blender (adjust spices to taste). add to cooked pasta, and top with extra veggies if desired (i added broccoli). use leftover sauce for dips + such. #bestofvegan

This lunch looked so much like summer, when in fact it was -3°c and freezing cold.❄🌡 but hey, if spring is still not ready to come out, it doesn't mean i can't have it on my plate😉
so on the plate i had sweet potatoes with a pineapple curry sauce (sorry i don't have a recipe, i bought the sauce) and a fresh veggie salad with cucumbers and black olives😁👍
Handmade shiitake sausages by @aboutthatfood 💚

makes 8 sausages.
•220g of shiitake mushrooms
•1/2 can of chickpeas
•1 white onion
•3 cloves of garlic
•3 tbsp of tomato puree
•2 tbsp of miso
•1 tbsp + 1 tsp of liquid smoke
•1 1/2 tsp of hot paprika
•3/4 of a tsp of cayenne pepper
•2 tbsp of tamari
•2 tbsp of sesame oil
•2 tbsp of estragon mustard
•2 tbsp of copped basil, can be dried
•3 tbsp of chopped chives, can be dried
•2 tbsp of agave nectar
•3/4 cup of veggie stock
•2 1/2 cups of wheat gluten
1place all of the ingredients, except for the wheat gluten, into your food processor and blend until smooth.
2place 2 cups of the wheat gluten into a bowl and mix together by hand with the paste of the remaining ingredients.
3place on a clean surface dusted with wheat gluten and start kneading, work in as much of the remaining wheat gluten until you get a doughy consistency.
4now divide the dough into 8 parts and roll each part into a sausage. wrap each sausage into a sheet of aluminum foil, twist the end tightly and make sure none of the dough can pour out while cooking.
5bring a large p*t of water to a simmer, make sure the water never starts to boil.
6place the foil wrapped sausages into the water and simmer for 1 hour.
7after one hour remove the sausages, let them cool for a little and then unwrap.
8slightly brush them with oil and place on the grill for a few minutes. #bestofvegan

Actually put a little effort into cooking dinner tonight 👽 haven't posted because i haven't been cooking quite frankly 😪 i've been depressed and eating take out mostly ☠️ this was really good and worth the effort 💪 glazed baked tempeh triangles (got the idea from @minimalistbaker ) with stir fry veggies and rice 🌱🍚 the sauce for the tempeh was so delicious i kind of want to put it on everything forever: tamari, maple syrup, lemon juice, chili flakes, sesame oil, peanut butter 💫 very yum and always vegan 💚
Let’s talk superfoods ⚡️ coconut oil is definitely my number one health product, and it has so many uses - internal and external! i love to blend a spoon of extra v****n coconut oil into my coffee ☕️ for that extra creaminess, or use it in my cooking for its incredible taste! coconut oil boosts metabolism, improves digestion, has anti-bacterial properties, keeps organs healthy, and has a higher resistance to heat that other oils! this means that it’s health benefits remain intact because of its molecular structure, and it is not degraded when exposed to high temperatures! i also rub coconut oil onto my body and in my hair and have noticed such a big difference regarding healthy glow ✨ coconut oil fixes everything 😂 hair needs some love? coco oil. nails looking brittle? coco oil. cooking needs some flavour? coco oil. problems at work? coco oil 😉🤷🏽♀️

i’m a sucker for anything with mushrooms, so this was an absolute winner. literally drizzle this everywhere - paninis with seitan and this mushroom gravy are the best.
