Thank you kristen @fullproofbaking. you’re the sweetheart of sourdough bakers! this loaf was made almost precisely as the recipe in kristen’s latest post, right down to the ice cubes. i rounded off the wholemeal, einkorn and chia seeds to 10% for convenience. the crumb is still not as feathery light and open as kristen’s, with a tighter spot in the middle of the base of the loaf, but i am pleased with it. it’s a delicious bread. sliced when hot.
