Good morning my friends, what are you taking for your lunch to work? here is ha great protein packed #sattvic #vegan quinoa & jackfruit salad recipe which will keep you full for quite a few hours πŸ’ͺπŸ‘Œβ€β˜‰
simply boil some quinoa. i like the tricolore kind as it looks pretty and includes white, red and black quinoa. then add some grilled jackfruit (more detail on that in my recipe tomorrow) or skip it or add any other meat substitute (e.g. braised tofu) then add roast chickpeas (recipe in my previous post), stir fried chopped peppers and yummy grilled courgettes. you may not even need oil or more salt/pepper because your ingredients will be so flavoursome and have some oil already (e.g. chickpeas). then finally add some organic baby spinach leaves and you're set. enjoy this nutritious healthy meal β€πŸ‘Œ #yogeshvarii #loveyogicdiet 🌱

Happy sunday. β˜‰β˜‰β˜‰β˜‰ hope you enjoyed the sunshine today and maybe even had a barbecue? well i had #sattvic #vegan "barbecue" in my kitchen and here is the result (half of it was eaten straight from the baking tray as it was sooo good). you can call it yogeshvarii's take on cauliflower "wings". πŸ€πŸš«πŸŒ±πŸ‘Œ so how did i make such goodness? by pure improvisation with what i had in the fridge. πŸ˜‰ i used one cauliflower head that was sitting in my fridge for a few days. i knew that cauliflower is sooo good for us (fighting inflammation, improving digestion, detoxifying body, helping to lose weight, etc) but couldn't decide what to do with it. when i thought that i'd give "barbecued wings" a go i realised that i didn't have flour and i didn't have barbecue sauce which i wouldn't have anyway as it's probably with garlic powder and therefore not sattvic. anyway i didn't give up. πŸ’ͺ
here is the recipe:
cut the cauliflower into florets and coat it into a batter made of one cup of almond milk and one cup of chickpea flour (i know sometimes you have to improvise!) add some spices to the batter such as my favourite cayenne pepper and smoked paprika. be generous with salt.
put battered florets on a baking tray and into the 200c oven they go until they're starting to soften and become slighly crispy. then the "wings" out and drizzle the "non barbecue" sauce on them i made it out of a few spoons of melted coconut oil, a few squeezes of tomato puree, cayenne pepper (of course) and salt. put them back into the oven and roast until proper crispy. eating them hot straight from the oven is heaven πŸ‘ŒπŸ‘ŒπŸ‘Œβ€#yogeshvarii #loveyogicdiet 🐀

Been in bed all day fighting migraine πŸ€’ and now managed to get up to make some quick dinner.🍽 here we have a super hearty #sattvic #vegan and #glutenfree meal - organic brown pilaf rice cooked with tomatoes, peppers, kidney beans and "barbecued" soya pieces. πŸŒ±β€πŸ‘ŒπŸ‘ start by stir frying some chopped peppers until soft, add beans then add rinsed rice, after a few moments add chopped tomatoes and some boiled water. season well and let it cook until rice is soft. stir in soy cubes (marinated in spices and olive oil and grilled on griddle pan) and some spinach (i add it everywhere). it freezes very well too so if you make a huge amount you can save some for a rainy day πŸ˜‰πŸ‘Œβ€ #yogeshvarii #loveyogicdiet 🌱

As promised in my previous post my friends, i'm sharing the recipe for these delicious roasted #sattvic chickpeas that you can eat on their own or add to the salad that i shared yesterday.
add chickpeas to the roasting tin, add generous amount of organic v****n olive oil, then add salt, cayenne pepper and smoked paprika to taste - be generous with spices! then roast for around 20mins in 200c oven and enjoy β€πŸ‘Œ adding more chickpeas to your diet has amazing benefits. humble chickpeas help increase satiety, boost digestion, keep blood sugar levels stable, increase protection against metabolic syndrome and heart disease, and more. chickpeas nutrition is a potent package of protein, vitamins and minerals πŸŒ±β€πŸ‘ŒπŸ˜‰ #yogeshvarii #loveyogicdiet 🌱

London has welcomed me back from crete with warm temperatures and sunshine which led me to cool off with #vegan icecream from @yoricamoments β€πŸ‘ŒπŸ˜‰ amazing flavours. made of coconut and rice milk - a great treat if you want to avoid dairy.

Hot days here in crete and it's nice to be having something light for lunch. πŸŒ±πŸ‘Œβ€ normally when i cook i put spinach everywhere and i started missing them when on holiday. i found this interesting #sattvic #vegan spinach salad on the menu. they add sheets of cooked filo pastry and then break them up.
spinach is like a power house in terms of its nutritious value. it has vitamin k, a and c, as well as folate, manganese, magnesium, iron, potassium and calcium. it's also a good source of niacin, zinc, protein, fiber, vitamin e , thiamin, vitamin b6, phosphorus and copper. ❀ #yogeshvarii #loveyogicdiet 🌱

Happy monday! hope you had a lovely sunny weekend β˜‰πŸ‘Œβ€ i made my first #sattvic #vegan icecream which turned out amazing πŸ‘ŒπŸ‘ŒπŸ‘Œ i only used two ingredients - ripe bananas & #coconutmanna. very simple to make: freeze some bananas, then slightly defrost and blitz it until smooth in a food processor together with coconut manna or you can use nut butter. freeze it again and eat it. β€πŸ‘Œ thank you to my dear friend giedre for sharing this amazing recipe. β€πŸ‘Œ #yogeshvarii #loveyogicdiet 🍦
