grilled miso aubergine: make incisions in aubergine halves, spread some miso paste, spray some oil and chuck them under the grill until brown and soft πŸ˜‰

Happy monday my friends! β˜€β€πŸ™ the week ahead is looking tough but arent we worriors? to be able to endure challenges ahead we need a good source of protein. forget all that rubbish that only meat and fish are complete protein (containing all essential 9 amino acids) because humble buckwheat has them all too! often overlooked my friends and if you are on #sattvic #vegetarian or #vegan diet make sure that you include complete proteins in your diet.
100g of my beloved buckwheat has 13 grams of protein!
here is a lovely salad recipe for you: boil 2/3 of a bag of buckwheat groats and mix with green olives, grilled soya cubes (recipe in my prev post), roast bell peppers (red, yellow and green), cucumber and tomatoes. season well and add some good quality organic olive oil. πŸ‘ŒπŸ‘ŒπŸ‘ŒπŸŒ±β€ this delicious meal will keep you full for a while. ❀ #yogeshvarii #loveyogicdiet πŸ‘Œ

the recipe is very simple: in a food processor blend some sunflower and pumpkin seeds, soft and sticky dates, a few spoons of coconut manna and oil, coconut flakes, one banana. use a small baking tray to flatten the mixture out, drizzle with dedicated coconut and some dried freeze rasbperries. put it in a fridge for a few hours to firm up. then cut it into squares or bars and keep them in a fridge or freezer! β€πŸ‘ŒπŸ‘ŒπŸ‘ŒπŸŒ± #yogeshvarii #loveyogicdiet πŸ’ͺ

this morning already planning my lunch ahead! πŸ’ͺ here are some yummy #sattvic #vegan #glutenfree roast pepper and chickpea fritters with fresh tomato & cucumber salad β€πŸ˜‰πŸ‘Œβ˜€
simply roast 3 colourful peppers until soft, transfer to the food processor, then add a tin of chickpeas, a tablespoon of tahuni, a couple of tablespoons of chickpea flour and a bit of corn flour - blitz it all. season well, add a tablespoon of the batter to the heated frying pan and fry until golden on both sides. enjoy hot or cold! πŸ‘ŒπŸ‘ŒπŸ‘ŒπŸŒ±β€πŸ™ #yogeshvarii #loveyogicdiet 🌱

I say let's start our monday with these satisfying #sattvic #vegan enchiladas! β€πŸ‘ŒπŸ‘ŒπŸ‘ŒπŸŒ±
here is my recipe for you my friends:
start making the tomato sauce. i always first fry some basil in coconut oil, then add one tin chopped tomatoes combined with half a bottle of organic tomato passata. let it simmer and add salt, honey and pepper to your taste. allow for it to absorb the flavours and thicken πŸ‘ŒπŸ˜‰
while the sauce is cooking, prepare the stuffing, sautee three chopped bell peppers in the pan with some coconut oil until soft, then add 2x tins black beans and diced jalapenos. now add half of the tomato sauce to the mixture and allow the ingredients to mix well.
add a few table spoons of stuffing to a corn tortilla, close it and line them all up in a roasting tin. when all tortillas in the pack have been used up, cover them with the remaining sauce. now grate some vegan cheese of your choice. i love getting my cheese from the online vegan kind supermarket. i have a discount waiting for you if you use the link and code in my bio πŸ˜‰

it is very simple to make with any plant milk following the ratio of three spoons of chia to a cup of milk. i used almond milk and added a dash of date syrup for an amazing flavour. left the puddings overnight in the fridge and then topped them with fresh raspberries and sprinkled with some dessicated coconut. happy friday! πŸ‘ŒπŸ‘ŒπŸ‘ŒπŸŒ±β€ #yogeshvarii #loveyogicdiet 🍧

Good morning and here is the recipe for these amazing #sattvic #vegan balls πŸ‘ŒπŸ‘ŒπŸ‘Œβ€πŸŒ±
soften a pack of kale in a pan with some olive oil, seasoning and a few spoons of tomato puree. also add 250g of cooked tricolore quinoa and stir fry until all flavours have been absorbed. cool the micture down and transfer to the food processor. add a pack of firm tofu and process it all. form balls and fry until brown in the pan. then transfer it to the 200c oven for another 15mins until cooked through.

teaching #zumba tonite at newham active balaam branch and need my energy. the best thing for me before a workout is having a homemade #sattvic #vegan energy ball packed with proteins and natural sugars. ❀❀❀ here we have amazing carob power balls that i've made the other day: process a few soft dates pitted, add a handful of pumpkin and sunflower seeds, walnuts and process again. now add a banana, a few tablespoons of ground almonds, coconut oil and a few spoons of carob powder. process until a sticky dough is formed and form balls. place in the fridge or freezer and enjoy β€πŸŒ±πŸ‘Œ#yogeshvarii #loveyogicdiet β˜€

here is a very simple recipe for you my friends:
boil 2/3 of a cauliflower until soft. cool it down and add it to a food processor together with a can of chickpeas and a can of jackfruit. process together and season well. add a few spoons of chickpea flour and form burgers. firstly, pan fry them until golden and then put them in 200c oven for around 20mins until cooked through. ❀ these thingies are also perfect after your yoga session or fitness workout πŸ˜‰πŸ‘
i love cauliflower as it is very low in calories yet high in vitamins. in fact, cauliflower contains some of almost every vitamin and mineral that you need!
