curry alla zucca e latte di cocco 👇
avevo preparato questo curry per gustarlo con del riso basmati, ma era così buono che me lo sono pappato così con del pane tostato.
gli ingredienti per questo curry sono:
- 3 tazze circa di zucca a cubetti
- mezza cipolla - due spicchi d'aglio
- due carote
- una zucchina
- curry a piacere - coriandolo - 1 tazza di lenticchie rosse decorticate
- mezza lattina di latte di cocco
- acqua q.b.

unite tutti gli ingredienti e lasciate cuocere fino a quando saranno teneri.
io ho aggiunto del prezzemolo fresco tritato prima di gustarlo 😋

pumpkin- coconut curry 👇

i wanted to enjoy this curry with some basmati rice, but i loved it so much that i ended up eating it by itself.
for this curry i used:
- 3 cups of diced pumpkin
- 1/2 onion
- 2 cloves of garlic - 2 carrots
- 1 zucchini - 1 cup red lentils - curry powder to taste
- coriander to taste - 1/2 can of coconut milk - water
boil until all the ingredients are soft and tender 😊
before enjoying it i added some fresh parsley on top.

🤨 salads don’t have to be boring! you can add so many different things to make it super tasty! 🤩 you can add cooked lentils with veggies 🥕 add the ones you like the most, season them with your favorite herbs 🌶 also, add some fresh veggies, avocado 🥑 nuts/seeds, seaweed, etc. make it yours by adding what you enjoy eating. 💚 make a simple dressing with tahini, lime juice and balsamic vinegar 👌🏻

🇲🇽 las ensaladas no tienen porque ser aburridas!!! 😒 hazlas a tu gusto! cocina lentejas y una vez listas las mezclas con las verduras 🥕 que más te gusten, las sazonas con hierbas de olor. 🌶 también es importante añadir algunos vegetales crudos, aguacate 🥑 nueces/semillas, algas, etc. pero, hazla enteramente a tu gusto para que la disfrutes! 😬 puedes hacer un aderezo súper simple con tahini, jugo de limón y vinagre balsámico 👌🏻

this is “maftoul” (known as moghrabiya as well) cooked the traditional palestinian way🇵🇸 since many of you asked for the recipe here it is! courtesy of my mama💕

chicken stew:
1. chop 6 medium sized onions and place at the bottom of the p*t with a handful of prunes
2. marinate 4 chicken b*****s with caraway (v important), allspice, black pepper, and a bit of cinnamon, then add it to the p*t
3. on low heat, add 2 cups of water and let it cook for 2 hours (🤯)
4. add 2 cans of strained chickpeas + salt and on high heat let it boil for 2 minutes
5. serve with a side of maftoul (aka giant couscous), a side salad (gotta get your serving of veggies) & enjoy!!❤️
